    I put peeled boiled eggs in a mason jar cover with vinegar and start eating in about a week. I use clean bottles, but not boiled. Sometimes I drop jalapeno or other peppers in. Easy and fast.

    Sounds good! Water bathing isn't necessary I do it to make sure my jars seal so I can store them in the pantry:)

    I don’t boil my jars any more to sanitize. I was in hot soapy water and rinse well. Let them drip a minute and put them on a cookie sheet and put them in my oven that’s been heated to 250 degrees and leave them for 30 minutes to sanitize. Just pull them out when I’m ready to fill. Read about the technique in a farm to table cook book. Been doing it for at least 5 years. So much easier . I like the idea of adding other things to the jars of eggs. Will have to try.

    Please do share the spice recipes, etc. Also, do you have a brine that does not include the premixed bag? I've been experimenting because I don't like to use the premixed kit with all the extra stuff & extraordinarily high salt. Otherwise, your canning process looks great - I've only made refrigerator pickled eggs, which are also good.

    I am working on a brine recipe. My next video I will share the recipe I used in this video. The recipe will still use the pre mixed bag. But I will have a brine recipe coming that is my own ingredients instead of pre mixed, I hope you stay tuned to see it :)

    I really like this idea bc id like a shelf stable puckled egg, but some videos i watched in the past basically say that the eggs turn out horrible and overcooked. How do yours taste? Are they overcooked?

    I always soft boil my eggs, and then in the water bath, they finish boiling. This usually keeps from over cooking them. They don't turn out rubbery (most of the time). This particular recipe they come out with a pickle flavor and a delicious spicy kick, not too much, though.     @tinamirabile4828 A hard boil is about 14 minutes, so I usually boil them for about 8-9 minutes. Just enough to be able to peel them and then they finish in the water bath. Here is my other video where I describe my process a lot better. kzread.info/dash/bejne/nJ6qz6mDnMWyeps.html

    They look good but I have a couple canning tips for you. Make sure the water is at least an inch over your jars in the canner and you shouldn't tighten your rings down after. Finger tight and then leave them alone for 24 hours after. Great job otherwise!

    You have brought it to my attention that boiling them is bad for the seal. I did not know that. I thought it was okay, but its only okay to simmer them, not boil. Thank you
