How a Popular Virginia Bakery Makes Hundreds Of Pastries a Day Using Wood Fire - Smoke Point
Тәжірибелік нұсқаулар және стиль
At Virginia’s Sub Rosa Bakery, sibling bakers Evin and Evrim Dogu mill their own flour and source their ingredients locally. Together, they make many types of croissants, including seasonal variations like the pear and ricotta croissant.

I worked in their father’s restaurant and saw Evrim begin this journey with his sister many years ago. The two nicest people one could imagine and deserving of all their success.

What a nice comment to post!! 👍
These siblings have an attention to detail and a wisdom in the art of making bread that came through the video, big admiration for them. I hope your business keeps growing that some day I can smell and taste one of your creations!
Eater should make an interactive map detailing all of the locations that they have made videos about. That way if people happen to be near one of these establishments that they’ve previously seen on a video, they can go and have a direct experience there. Anyone up for the challenge? Eater?!

Could watch hours of this. They seriously talk about all this with serious passion. Love that people are working on something they actually like.
It’s kind of mind boggling to see what these bakers are doing. Fresh milled flour, home made croissant dough and wood fired ovens. As someone in the food industry for 15 years, hardly no one expends that level and care in baking bread and pastry much less using a wood fired oven. Amazing!

My Grandparents owned and operated their own Bakery in St. Louis in the 50's and 60's but their specialties were Bread, German Pastries, Cookies and Cakes. Those Pear Croissants look amazing. 😯😋
I just love local bakeries. They’re so special, and it’s such a privilege to have such skilled bakers in our community. I gladly pay $15 a loaf.
There parents should be beaming with pride and love of the kids they've raised.. Such a awesome, creative and informative episode.. Thanks
5 minutes from me in RVA and after hearing so many great things about the place and never visiting, I'm getting some of those pear croissant tomorrow! Yummy!
Back in India before packaged flour became a thing, everyone used to get wheat and take it to a local miller once a week. The Roti's that were made from the freshly made flour was really delicious, soft. Local miller's are a lost art now
i was in antalya/turkey for 4 month in 2013 and i miss the fresh bread an pastry so much. Nice to see that someone took the knowledge from the elders - i also was working as a baker in germany and there is so much work and passion into it, i love it. but most customers dont want pay more for better food, so its really rare to see a bakery like this.greetings and a happy new year ! ^^
Coming from a chef I gotta say bakers, artisan bakers like these are artists and truly talented!!
Years ago, on a visit to Richmond, I did visit Sub Rosa. I think, I happened upon it. And, I didn't think too much of it. I can't even remember what I ordered. But, I do remember it was a good experience. Of course, I had no idea about their being a wood fired bakery. And, I didn't realize all the hard work that makes the bakery what it is. Wow. When Evrim Dogu talked about his favorite bread and how it's achieved by the masonry having soaked up the heat and how that affects the texture. And, those unconventional croissants! The fig jam and cheese croissant sounded particularly alluring. I need to go back to Sub Rosa again. This time...with a whole new appreciation.
I live 5 minutes from here! The staff and baked goods are incredible!! There’s no wifi available, in that way you’re really encouraged to slow down and read a book or chat to people in the cafe. Such a treat to see behind the scenes!
Truly the most amazing bread and pastries!! They are above excellent. I am a huge fan and this video shows why!! The incredible care and effort that goes into everything they make, makes it the best in the world (in my opinion!).
I just stumbled on this, and it’s in my neighborhood a few blocks from my house! I can 100% vouch that the food is excellent and incredibly consistent over the years that we’ve been going
This place is fantastic, highly recommend visiting if you're ever in Richmond. Expect to wait in line, though people are generally quite friendly and often accompanied by dogs.

Out standing using wholesome natural ingredients and using wood 🔥 , Thank you for your Artesn work and the respect for integrity of baking .
I wish places like this were more commonplace. I would definitely be a regular if they were within driving distance.
I'm ashamed I didn't know this existed near me! Looks like I'll be driving down to Richmond soon!
I can feel your love and passion for the product in every sentence. Fantastic, thank you.
Great siblings and great business they’re running. We need more of the same shops around the U.S. Thank you E for sharing
My guy is so excited to be featured, he doesn't let his partner get a word in. Bless but also, my man, make space.
Just looks amazing, I could picture myself with a good coffee and pastry and getting bread for home, just good vibes.
One of the greatest arts in the world, and this bakery looks absolutely top notch. Congratulations!
Was getting a Turkish vibe from their goods and then the sister said the family has roots in such a beautiful country!!! I can’t wait to visit the bakery for a taste of a home that I used to know!! 💚💚💚

I mean their last name is totally Turkish. His first name is Turkish too. I am not sure about her name because it doesn't look like a common Turkish name. However, their accent is not Turkish. I believe they have born and raised in US.

Amazing Bakery. He is correct, it is very rare you will see a woodfired bakery doing everything out of just the woodfired oven. They are not the only bakery doing both, but they are extremely rare.
Blue Oven here in Cincinnati does the same, and their bread is unreal. They also grow a lot of their own grains on the farm that they operate on.
Heck yea, go Sub Rosa! Calling them the best bakery in RVA would be an understatement. SOOOO GOOOD!
It's not the only wood-fired bakery in the US. It IS one of the few.

Oh, how I wish to be in Virginia.......just to visit and bring some lovely bakery goods home for my family !
Colleagues and I made a point of going to Sub Rosa working a job in Richmond. Insanely good, the place smells like heaven. Things sell out fast in the morning so buy two of everything - one to eat on site, one to thank yourself with later. Can't recommend them enough, Richmond in general was a super fun place to eat in and a very interesting city.
Super glad I came across this. The pear and ricotta croissant looks divine. I live some hours away, but I think I'm going to make a trip this month for sure.
Holy mother how much are these croissants? Fresh grain and fresh milled flour?! Wood oven?! This is miraculous 😋

HOLY SMOLY!!!! Hats off to ya!!! FANTASTIC!!!
This is a great bakery, I visited it several times, especially the porca, which is a pastry filled with feta cheese and of course the pear pastry is heaven. The brother and sister that own the bakery are my nephew and niece. I am so proud of them.
Love their attention to the last details (Amazing) also I understand what it takes because for years I make my own Bread. Thought many Wood Ovens growing in parts @ USA. Great work!
Good job guys, love that you're grinding your own flour. You have complete control, that the way to do it.
Very beautiful space and the product looks amazing too!
There was a shop in Burlington, Vt. that did wood fired bagels etc... This was the late 1990's. Really good stuff.
I have been a baker for 35 years in Australia I love what you are doing
The passion for creating great food great to behold. Every aspect considered, its very cool.

So annoyed I’ve never heard of this spot even though I’ve been to Richmond numerous times. Plenty of great places to eat and drink through out the city. Answer Triple Crossing (Fulton Perly’s Jewish Deli Fancy Biscuit🔥🔥🔥 Shyndigz ZZQ - Barbeque Sugar Shack (donuts) Millies (diner has brunch with drinks) Proper Pie Co (NZ sweet & savory pies) Saison Market - Small Bottle shop in a coffee shop with beer taps as well Mekong (Vietnamese food) Just to name a few

You’re right about all the amazing food in Richmond. I’ve lived here for 6 years now and just now hearing of Sub Rosa. I’m going to stop by now and try their quiche. Millies is a Richmond staple. ZZQ’s is amazing BBQ and Proper Pie Company’s savory pies are delicious. La Bodega is really good too, for authentic Cuban food. Too many great restaurants to name them all. I’m excited about trying Sub Rosa. I’ll have to try Fancy Biscuit too! Thanks for sharing your suggestions. I love finding new restaurants and bars!

Agreed on all fronts besides Mekong having the best Vietnamese food (AMAZING BEER THOUGH) and Sugar Shack being anything other than spit on donuts. Also, Saison is closing last I checked. Hope you got to check out Sub Rosa, they blow out how good everything else is out of the water. The Cinnamon Sugar Croissant Braid is the best thing I have ever had in this amazing city. (also if you need a Mexican spot, Tacos Mexico is a great taqueria SotJ).

Croissants smell great. Yes, seeing them triggers the aroma in my mind. Not an easy thing to do.
OMG! I want to be there and I want, at least, one of everything! And I'll be back the day after and after!
I’m heading back to Virginia right now!
The regular croissant is my number one ever!
BRAVO !!!
