Hello Horseradish: Make Your Own Fiery Decongesting Relish
Horseradish is in the kitchen! We’ve had three hard frosts, which sends a plant’s resources into its roots; and signals the beginning of the root digging season.
Horseradish relish-the familiar spicy condiment-is a stimulating herbal medicine that we can easily make ourselves.
Properties of Horseradish
This strongly heating, stimulating, rubefacient root is blood moving and decongesting, but it can be irritating. It’s used to increase digestive fire, as a sinus opener, circulatory invigorator, and a poop maker. It helps to bring phlegm up and out and can help with wet coughs and wet, damp conditions in general.
Still, it may not be good for hot, dry and irritated situations i.e., can make a dry cough worse. Likewise, it can make an inflamed gut more irritated. Lastly, it is a star player in immune boosting Fire Cider (but that is for another lesson).
Habitat
Horseradish, scientifically called Armoracia rusticana of the Brassicaeae, is a perennial native to Southeastern Europe and Western Asia. Now you can find it growing in many parts of the world and throughout USDA hardiness zones: 4-8. Look for it in deep, rich, moist loamy soil, in a sunny location, but it will take part shade.
If you can’t find any I suggest you plant some in a spot where it can spread and do its thing. It is persistent and will regrow from root fragments, so plant it where you want it. It is very easy to grow, just give it plenty of deep, humus rich soil and a good blanket of mulch.
Fresh Horseradish Relish Recipe
Makes 16 oz
8 oz fresh horseradish (by weight), chopped
8 oz organic raw apple cider vinegar
1.5 teaspoons Celtic sea salt
Place ingredients in the food processor and blend for a minute or so. Eat right away or store in the refrigerator in a tightly-lidded, glass container. Use a plastic or other non-metallic lid as vinegar corrodes metal.

I bought a root from a plant nursery a few years ago. I put it in a planter. I need to dig some up and see how it is. I made my sauce very similar to yours. I grated mine using the fine side of the grater. I love it freshly made

I’m glad I watched this! My fire cider is almost ready and I was going to give my son a tablespoon a day for his respiratory problems; however, he has chronic pancreatitis which would really mess him up! I always seem to watch a video of yours at just the appropriate moment in time. 😊

Great presentation!!! I have never processed it but have grated it freshly onto a saucer and inhaled the fumes (carefully!) to relieve asthma. I don't think it will grow here I'm in 10a. 😔

As usual excellent, in info & presentation & beautiful outdoors! yahoo! 1-Can we start horseradish from the kind in store? 2- can we use store bought horseradish, in making...? 🌿🌿🌿🌿🌿🌿🌿🌿🌿🌿 Ha my ex husband is a landscaper and it was one of his 1st potted plants to me. I think I'll had it for yrs, & it didnt really grow much...

Thank you. Don't know if a plant will grow from a store bought root, but why not give it a try. Yes, you can use store bought for making this relish. And funny to think of horseradish in a pot as it needs deep soil and space to grow well.

How long will horse radish keep in the refrigerator?

Good question. Do you meant once prepared into relish or fresh root? Relish: I've had some stay good in fridge for years. Root, not sure... it will dry out and lose it punch but not sure how long that would take.
So is Wasabi a different warmer weather variety? I'm in Alaska and didn't have much luck growing it. I"m wondering if I had a warm weather strain.

Thanks for your comment. Wasabi, scientifically called Wasabia japonica (or Eutrema japonicum) is an entirely different species. It is in the same family as horseradish (Armoracia rusticana) but not the same plant.. Wasabi is not hardy below 27 degrees F.
