Healthy Snickers Bars Recipe: A vegan and gluten-free dessert recipe that everyone will love!

In this healthy vegan and gluten-free Snickers bar recipe, you'll be able to enjoy the deliciousness of Snickers without all of the harmful ingredients! These better-than-snickers healthy candy bars are dairy-free, gluten-free, refined sugar-free, and vegan.

Ingredients:
Nougat layer
1 cup oat flour (120 grams)
1/2 cup almond flour (56 grams)
1/4 cup maple syrup (60 ml)
1 tablespoon creamy peanut butter (16 grams)
Caramel layer
1 cup Medjool dates, pitted (230 grams)
4 tablespoons maple syrup (60 ml)
2 tablespoons creamy peanut butter (32 grams)
1/2 cup dry roasted lightly salted peanuts, mix into the caramel (56 grams)
1/3 cup dry roasted lightly salted peanuts press into the top of the caramel layer (37 grams)
Chocolate Coating
1 1/2 cups mini chocolate chips or finely chopped chocolate bar, melted (approximately 262 grams)
Instructions:
1. Prepare a loaf pan or similar size food storage container.
2. Line it with parchment paper.
3. Make the nougat layer in a bowl by mixing together all the nougat ingredients. You could also use a food processor. It’s a bit faster.
4. Press the nougat into the pan, spreading it out to all the sides and corners. Flatten with the back of a spoon or the bottom of a cup, or… you get the idea, just make it smooth.
5. Make the caramel layer by adding the pitted dates, maple syrup, and peanut butter to the food processor. Process until you have a thick and smooth consistency. If your dates aren’t soft, you may need to soak them in hot water for 30 minutes to an hour.
6. Mix in the 1/2 cup peanuts. Then place the caramel layer on top of the nougat layer. Spread out to the sides and corners.
7. Press in more peanuts. I used about 1/3 cup.
8. Place in the freezer for about 1 hour to set.
9. Melt your chocolate.
10. Remove from the freezer and cut into bars. Make them small or big, whatever you like!
11. One by one, dunk each bar in the melted chocolate to coat.
12. If the chocolate doesn’t harden in about 5 minutes, place in the refrigerator for about 15-20 minutes or in the freezer for about 10 minutes for the chocolate to set.

    Hey there... this recipe is not free of refined sugar, if you use the Enjoy Life chocolate. But your way, with stevia-sweetened chocolate, probably is. I know we all like to pretend the Enjoy Life chocolate doesn't have sugar - Paleo recipes have the same affliction - because it's otherwise the best choice. But that's just not the case.

    They look really yummy. Just a thought, strictly speaking they are not sugar-free, just because sugar was replaced by other ingredients doesn't mean it's sugar free, but I think we all know that lol.

    Thank you, Manny! You're correct, not sugar free but free from refined sugar. As a whole fruit, dates contain natural sugars. They are a better choice as a sweetener. As a whole fruit, dates contain fiber and other nutrients as well. These are still treats though. 😀

    Pssst... they're not free from refined sugar either. Enjoy Life choc chips contain regular, refined cane sugar. That's ok with me - it's candy - but to say otherwise is a false claim.

    Maybe use a skewer to contain the chocolate and drizzle over the bars, so there’s no excessively thick coating? And use a rack to let the excess chocolate drip off. Let it harden and make chocolate chunk cookies. Lol. Edit: My apologies, always great recipes. We appreciate you and you innovate ideas.

    Tried them. I LOVE sweets, but those almost knocked me out because of how sweet they were. I think using regular sugar would have been better, especially since these ones don´t taste like Snickers at all. I could only taste dates, no caramel at all. I´m not sure if I want to make those a second time, but if I did, I would use fewer dates, try a different caramel recipe, and add more peanuts.

    Hi Julia, so sorry you didn't like how they turned out. You could definitely make a traditional caramel. The goal of this recipe was to make it free of refined sugar. If it's too sweet for you, you could adjust the ratio of dates to nut butter for that caramel layer. Adding more peanuts would also help. If you want a traditional caramel that is also vegan, here's one you may want to try.     I made these and they turned out really well but being a snicker lover they lacked to me. I think I will try to add a sugar substitute the next time instead of maple syrup. Other than that they were great. Thanks for great recipes.

    Hi Francine! I'm so glad they turned out well, but sorry they weren't a home run for you! Agave is a more neutral liquid sweetener that would be a good sub for maple syrup. You could try making a small amount of that nougat layer to see how you like it before making the entire recipe again. Here are the measurements to make a smaller amount. Make half the amount: 1/2 cup oat flour (60 grams) 1/4 cup almond flour (28 grams) 2 tablespoons agave (or other liquid sweetener) (30 ml) 1 1/2 teaspoons creamy peanut butter (8 grams) Make one quarter the amount: 1/4 cup oat flour (30 grams) 2 tablespoons almond flour (14 grams) 1 tablespoon agave (15 ml) 3/4 teaspoons peanut butter (4 grams) Thank you for challenging me to think outside the box and exercise my brain with some math today!! Haha!! 😀 I hope this helps! 🤞🏼 However you adjust the recipe, I'd love to know how it goes.

    Thank you, Molly! 😀 Actually, it is not safe to eat raw wheat-based flours like all purpose flour and cake flour because raw flour can contain harmful bacteria or other contaminants. I believe that you can heat treat your flour first so it is cooked, but not sure at what temperature and for how long. I hope that's helpful! Let me know if you have any other questions. If you have a nut allergy, you could always just use all oat flour instead. The texture will be a little different, but still delicious.

    Hi Dawn! I believe buckwheat flour is safe to eat raw. I imagine the flavor and texture might be a bit different so you may need to adjust the amount of liquid ingredients (maple syrup, peanut butter) in that nougat layer. You could sub the oat flour with more almond flour or coconut flour or a combination of the two. I hope this helps. Let me know if you have any more questions and I'd love to know how it goes! 😃

    Thank you, Susan! The dates give that caramel texture and flavor. You could try using peanut butter or another nut butter mixed with agave or maple syrup. So maybe 1/2 cup peanut butter to 1/3 cup agave or maple syrup. That would result in a nice sweetness and creamy consistency that I think would work. I hope that helps!     Great question, Rachel! I like prefer storing them in the freezer because they last longer that way. Best to eat within a few weeks or so. If you do keep them in the freezer, let them sit out at room temp for about 5-10 minutes. I actually prefer the texture cold too. The caramel layer is more solid. So yummy!     They will keep fresh in the refrigerator for up to 2 weeks, and in the freezer for 3 months or even longer. 😀

    I think it would change the flavor and maybe the texture. It's possible you might need to adjust the amount of liquid - maple syrup or peanut butter - since pecan flour may absorb more or less liquid than almond flour. I just haven't tested it so can't say for sure. Alternatively, you could just use all oat flour instead. If you go with the pecan flour though, I imagine that using crushed toasted pecans instead of peanuts would be fantastic to switch it up. It would be more like turtles. 😃 I hope this helps.     I have not tried it so I can't say for sure that it would work. I imagine it could. Also, I believe buckwheat flour is safe to eat raw. When consuming raw flours though, you should always check. Any raw flours I use in recipes that call for raw flours are safe to eat raw. That's one of the reasons oat flour and almond flour work so well in this recipe. If you try it, I'd love to know how it goes! 😀

    Hi Stephane! Cacao nibs don't melt. There are 100% cacao chocolate bars that have no sugar that would work. There are several brands that make those like Endangered Species and Raaka. There are refined sugar free chocolate bars that use coconut sugar instead of refined cane sugar. Look for Raaka and Hu for those. For no sugar stevia or monkfruit sweetened chocolates look for bars from Evolved and Lily's. To keep sugar lower, you could always go with an 88% cacao bar. The higher percentage cacao, the less sugar. I hope this helps! Please let me know if you have any other questions.

    Is there a replacement for the almond flour? My daughter is going vegan but the trouble is she is allergic to almonds.

    You could try replacing it with oat flour, so just using all oat flour for the nougat. Coconut flour is a good substitute for almond flour in terms of texture in no-bake desserts like this, but may introduce a bit of a flavor that may not work as well for a snickers. I've made cookie dough bars with all oat flour before too. The recipe for those is very similar to the nougat in this snickers bar. The texture is just a bit more dense, but still delicious. I hope you try and enjoy!     Which flour would you use? My hunch is that it will work. The texture will be different, but I think you can get away with it. Give it a go. After you make it, test to make sure you like it before putting it all together. That said, the other components - the caramel layer with the nuts and chocolate - will elevate that nougat layer. I hope it does and that you enjoy it. Would love to know how it goes. 😃

    "healthy" can be measleading.. that is a really high calorie bar, at least it's not an industrial snack, but calorie wise this is not ideal, high fat (the good one, but still fat), and FULL of sugar. Definitely not healthy. They looks delicious anyway.

    They really are so delicious! While the sugar content is less than an actual Snickers bar, using dates as the sweetener is better than refined sugar, there are good nutrients in the oat flour and almond flour, you are right that this is not a low-calorie treat. If you want to lower the calories and sugar content, you can substitute water for the maple syrup in both the nougat and caramel layer. You could also use a higher percentage cacao chocolate bar for the chocolate. I typically use 72% cacao. You could even go higher on the cacao percentage of the chocolate to 88% or use sugar-free chocolate. Instead of enrobing the bars in chocolate, you could use less chocolate by putting the chocolate on just the top before cutting into the bars. As with all treats, it’s best to consume in smaller quantities. I find that because these bars don’t contain refined sugar, palm oil, corn syrup, and milk fat, a lesser amount satisfies my sweet tooth and chocolate cravings. I hope you make and enjoy them!     Thank you for your sharing your thoughts here. To clarify, with this recipe I’m simply offering up a healthier and vegan version of the iconic chocolate candy bar. The ingredients are more wholesome with more fiber and free from processed ingredients like refined sugar, corn syrup, palm oil, and milkfat as found in an actual Snickers bar. Given that, a lesser amount goes a long way. My taste testers and I found that anywhere from 1/4 to 1/2 of a bar satisfied our sweet chocolate cravings. I find that more processed candy bars are more addictive resulting in consuming a lot more of them.

    My taste testers and I found that anywhere from 1/4 to 1/2 of the bar satisfied our sweet chocolate cravings and was the perfect amount. You could always make 16 smaller bars instead of 8 big bars, or simply only eat half of the big bar. Also, keep in mind that the bars are fairly large so probably more comparable to the large snickers vs the original size. It would be interesting to compare the two by weight. If you're looking for a healthier treat though, there are many other options. One idea is you could make just the caramel layer with the dates, peanuts and peanut butter and spread about a tablespoon or two on a large slice of apple. I just thought of that and may try it today. To reduce the calories, you could also drizzle the chocolate or just cover the top with chocolate instead of dunking the whole bar in chocolate. You can make many adjustments when you make your own so feel free to modify as you see fit.

    Hi i made these last night on HALLOWEEN for my husband and I !! I always try and make "healtheir" versions or high protein versions of anything you can think of. And my husband is always skeptical because i always use oat flour, almond flours, coconut flours, or any replacement for a healthier choice lol and he loved loved loved THESE SSNICKERS !! He was blown away! he couldn't belive it. So EVERYONE Make this recipe. I did use semi sweet chocolate chips, and blue agave instead of maple syrup. I food processed steel oats to flour. omg IF I COULD ONLY POST A PHOTO ON HERE of how beautiful they came out, but not only that, delicious!! DO you happen to know by chance the macros of a snicker bar??? @thatsnazzylife
