I grassi dell'olio non vanno mai uniti all'acqua in fase d'impasto , ma sempre quando la maglia glutinica è quasi completa e l'acqua è stata già assorbita del tutto . È la base della PANIFICAZIONE!!

Ma tipo ora non dovreste fare un video dove i cuochi stranieri si indignano per come i cuochi italiani hanno rovinato una loro pietanza? O vale solo per l'amatriciana, il pesto ecc.?
Dovrebbero essere 100 g di lievito madre per 1 kg di farine, in quanto di solito si usa il 10/30% di lievito madre in massa rispetto alla farina. Nella lista degli ingredienti avete scritto 500 g ;-)

La ricetta dice 500 gr di lievito naturale,lui dice il 10% ossia 100 gr,ci fosse uno che desse una ricetta esatta,sempre incongruenze ci sono

Did he just say that seasoning a burger before cooking it is optional? That's absurd. Italians, why must you fuck around with brugers when you do so many things so well, and burgers are so easy to get right?
This is done with an impressive amount of precision! Hamburgers are super popular now in Europe but as an American, I cringe a bit. The same way an Italian cringes if they see one of us making carbonara with heavy cream and Oscar Meyer bacon...but the thing is...burgers shouldn't be over-thought...smash it! Get that crust! Get that greasy juicy goodness!

Questi panini erano già pronti sono panini industriali . All inizio del video si vedono sullo sfondo e poi la carta da forno dopo 16/17 minuti a 240 gradi non è possibile che è ancora intatta

Con il dovuto rispetto, ma un "Pizzaiuolo" (dove la "P" maiuscola e la "u" sono d'obbligo) che ripropone a modo suo (estremamente semplicistico, oltretutto) una pietanza estera equivale un po' a mettere l'ananas sulla pizza. Le persone che parlano nel video, tutto mi sembrano fuorché esperti. Per carità, il panino sarà buono ma è indubbiamente ben lungi dalla sofisticatezza a cui oggi siamo abituati in materia: pane più elaborato (mix di farine, semi e formati), cottura della carne sous-vide con relativo processo di "searing", inventiva su contorni e salse...

La carne non si chiama hamburger ma 'meat patty' hamburger e' tutto il panino.
italians criticise the americans and brits for doing italian food badly. but then they do the same thing in reverse. fry the cheese? not seasoning the burger? no butter? not a single condiment? provolone cheese? a panini roll? hmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm

non metto in dubbio che il panino sia buono, anche se la tritatura della carne e troppo fina, e troppo impastata, fare un hamburger cosi equivale a mettere la mayonese sulla pizza, noi Italiani ci offendiamo sempre quando gli americani modificano la nostra cucina ma quando noi modifichiamo la loro va bene tutto....

the meat is overcooked, the vegetables are oily and overcooked, the cheese is visually repulsive as well as oily and overcooked, the "bun" looks like a ciabatta wearing a cheap bun costume and is visibly soggy with oil from the meat, cheese, and vegetables, and there is no textural contrast, no sharpness, no crunch. try again Uomos

Agreed with everything except for the meat being overcooked-it's still red inside. But yeah, any vegetables should be not only fresh, but also raw, (onions can be grilled if you want, but everything else raw). They need to provide a contrast to both the bread and meat in both texture and taste. That contrast is completely negated by cooking them, especially when you end up with an oily mess.
