INGREDIENTS
For the salad
▢3 pounds potatoes - cubed
▢¾ pound green beans
▢1 pint cherry tomatoes - halved
▢1 medium red onion - sliced thin
For the vinaigrette
▢½ cup olive oil
▢½ cup red wine vinegar
▢½ cup parsley
▢1 tsp kosher salt
▢¼ tsp pepper
▢1 tsp Dijon mustard

What a great idea to add the green beans! Your version of Mediterranean potato salad is spot on! We never add mayo to our potato salad, but fresh parsley is a must! As always, Excellent recipe Chef!

Added two anchovies to the vinaigrette. It’s a keeper!
Oh my yum! This is one of my top 3 favorite summer salads( really any time of year!!!)
To cut sherry tomatoes fast: put a plastic lid on the counter top, about 10 ‘ diameter then put the sherry tomatoes in, fill the top. Put another lid the same size on top of the tomatoes. Keep the lid firmly in place with your hand. With a serrated knife slice the tomatoes.

I used to eat this all the time growing up. If you want to get really simple you can just do olive oil and red wine vinegar as a dressing and it's still delish! We always put very thinly sliced red onions in this.

Thank you! This time of year I would say lots of grilling and veggie dishes with zucchini, eggplant, peppers, and tomatoes. Though, most people here in NY/NJ are probably still making their pot of Sunday sauce at least a couple of times a month lol.

Thanks Richard! I used to grow a ton of pole beans in my old house. I had a big trellis and hung strings from there for the vines to climb. I also grew vine cucumbers for pickles. Next year this house will have a big garden. For now, what I planted will do lol.

This is one of my favorite salads! I add a little oregano. I always make it! It's absolutely wonderful with roasted chicken or chicken cutlets! I sometimes put hard boiled eggs in it for a complete meal! Thanks for another great video!

The Southerner and the German in me wishes to inform you that that is not potato salad. the rest of me wants to say that looks amazing.
I love the salad, going to make it. I find all your food is healthy, grass-fed beef, free range eggs/organic chicken etc and lots of fresh produce. More salads, and I'm curious about making your own pasta, using one of those machines I guess. BTW, bread has been discovered to basically aid in weight loss, so we shouldn't worry about eating it, in any form. Rye bread isn't Italian, but it's about the best grain you can eat in terms of health/fiber.
I've had this with the basil and parsley and with oregano and spinach and the Oregano version just blows everything else away. I'd also lose the dijon. This is actually a really old old country dish with the oregano and the other herbs are more an italian american thing. Good any way you have it, but the traditional way is such comfort food
Beautiful salad! Those tomatoes really make it pretty, which I don’t think I’ve ever said about a potato salad. lol I like dill and parsley in my potato salad, but I’ve never had it with basil. I would definitely love to see some of your salads done in video format.

Yes you can leave it out. It doesn't add too much taste and is really just an emulsifier to hold the dressing together. Thanks for liking the videos!

Where do you live? I’m in Ohio and my Italian oregano comes back every year. Hell it stays green until almost January

I'm on Long Island. I didn't use oregano for this dish. I used basil and parsley.

Thanks! I would serve at room temperature or even cold. It's great the next day when the vinegar soaks into the potatoes even more. If you plan to serve it the next day I would toss the tomatoes in right before eating it.
Potatoes should never go into boiling water! Always start them in cold water, bring to a boil, reduce to a simmer, and cook until desired doneness. Try lemon juice and whole grain mustard in place of red wine vinegar and Dijon.
is it weird that i really hate the taste of raw olive oil? i’ve tried a bunch a different ways and a couple brands but i can’t get with it lol.
String beans/potatoes/tomato sauce???...just add some boiled potato pieces into the string beans and sauce🤔😉
