POTATO & STRING BEAN SALAD:
2 lbs Potatoes, Russet (or your favorite type)
1 lb Fresh String Beans (boiled in water with 1 Tbsp Salt)
½ cup Red Onion, sliced
Extra Virgin Olive Oil to taste
Black Pepper to taste
Oregano to taste
Salt to taste
4 Plum Tomatoes, cut into large chunks

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

I know Ginger. I miss my grandmother so much. I lived with my grandparents for the first three years of my life and she taught me so much even as a child. She taught me how to cook and sew and I helped with the garden. We picked dandelions for salad and went mushroom hunting. When I became old enough to walk to her house i would stay with her as many weekends as I was allowed to, until I was seventeen. After a tour in the Air Force and practicing law for eight years in Texas, I moved back to my hometown in Illinois. My grandparent's home and tavern is still standing and operational. My wife and I often go there for dinner and the memories come flooding back to me. I still cook like she showed me and I have taught my three daughters how to make her favorites.

My family makes it exactly like this. We do add a splash of red wine vinegar. My grandma is from Italy and Gina’s recipes are almost exactly the same as her’s. Truly authentic recipes if that’s what you’re looking for.

My Mom used to make this salad with vinegar also. She may have put tuna in it once or twice, I don't quite remember, but what I liked most was when she would add chunks of Mozzarella to the salad. That was my favorite part.

Tina, my Nona would clean and boil the beans and then gently saute them in the grease of four slices of bacon. Then she would add the beans and diced crisp bacon to the salad along with the other ingredients. Then she would add vinegar. Like they say, "Everything goes better with bacon".

Oh, yeah, Feta sounds really good for this salad. I just previously commented that my Mom used Mozzarella which I loved in the green bean salad.

Every week or two, the highlight for me is watching your new video!! This one is especially endearing! I'm like granddaughter Gina, I just love tomatoes! I would rather eat cherry tomatoes than candy or a chocolate bar! I've always been that way! I make a fresh vegetable pasta salad and always have a ton more tomatoes!! My grandparents migrated to America from Sicily with their 7 children, my mom was the middle girl and I grew up in my grandparents home. She reminds me of my grandmother she was from Sicily. She also taught me how to sew and cook but it’s so refreshing to watch this lady and she really does remind me of her. God bless.
A lovely woman from northern Italy taught me to make a similar salad. It is delicious. Her version had potatoes, green beans (she grew the big flat green beans) finely chopped fresh garlic, loads of finely chopped Italian parsley, extra virgin olive oil, Italian wine vinegar and salt and pepper to season. Peel, dice and cook the potatoes. Blanch the green beans in boiling water for no more than 30 secs then drain and place in iced water to keep them green and crunchy. When potatoes are cooked to your preference (I like them soft in potato salad) drain and add the chopped garlic and parsley. Then add all other ingredients and mix together gently. Add enough olive oil to coat the ingredients and enough wine vinegar so that the salad is slightly wet. It will soak in over next few minutes. This salad is delicious warm or cold.
