    Delicious! I did not have chestnuts so I used pine nuts I had on hand. Also, I added a splash of wine and a touch of maple syrup (in honor of my French Canadian husband). Definitely a festive dish for the holidays and would make again.

    @John James Rambo from my experience, it is to prevent it from burning... the pan is hot, and without the olive oil, the fat on the pancetta will burn, and the pancetta will charcoal instead of brown

    I substituted walnuts for chestnuts and it was not bad, had a nice crunch. Also used bacon instead of pancetta which worked fine.

    Have you ever considered roasting your brussel sprouts in the oven? I find that they take on a much greater range of flavors than when simply boiling them, and they get a nice caramelized exterior.

    I do the same.. I massage a mix of olive oil and veggie paste onto them then roast in the oven. I don't even boil. I think they're more tender then people realize. It doesn't take a lot to cook them and its amazing!

    Tried to find that pancetta online with those ingredients. Couldn’t find it. Closest was on Amazon (most choices) but not exactly what he described. Wonder if it’s home made? Looks very good!

    My friend who works at the casino in Atlantic city NJ, who knows ? Chef Gordon Ramsey , he owns a restaurant there!. He is a super nice person and Ramsey is not a rude person, he doesn't yell at his help, he loves to teach his cooks and he told my friend all of that yelling is for the show and for his ratings.     Try dressing the sprouts and baby rainbow carrots with olive oil, sesame seeds and seasoning and bake for 30 - 40 min or so covered w foil. Splash with pepper sauce and done!

    Could you do an oil special where you go over all the types of oils you like, and how to use them, and why? For instance I have nut oil, always want to use it but it burns too easy. Olive oil is nice for its heat resistance, but I find it sorta pushes the favor profile in a direction and I don't always want that, for instance if I plan to add cream for the sauce. I got some grape seed oil because of its heat resistance, but in the end I never use it because it doesn't evaporate/combine with food as well as olive oil, and the taste isn't that great I find. I also have nut oil which I'm eager to find more recipes for, but it burns very easily, and I don't eat many salads lol. I'm curious which oils you consider staples and how you think about their best uses.

    You're a great chef, but... Here in Brussel, Belgium, we NEVER EVER cut Brussels sprouts in half! We just slice a little cross at the bottom so the hard part cooks equally fast as the softer part. If you slice them in half, they will not cook evenly at the hard and soft part, so you will allways have a crunchy and a mushy side on each half. If you leave them in one part, it will have a totally different sensation in your mouth. You feel it pop in your mouth, you feel the crunch equally in every bite... so much better!

    @@ohWaltsi That's exactly what we don't want in Belgium. We want the inside to have a little more bite and the outside crunchy baked in lots of butter. That way you feel the sensation of biting trough the whole and feel al those different bites.. When cut in half, you loose that sensation, so that's a no go in our region. 😉

    You can buy them jarred like that and it makes them much easier to use than cooking and shelling them yourself. But the jarred ones are pretty expensive.

    Onions a fantastic addition with pancetta....zest is good but i wouldn't add lemon juice unless a small touch of butter is added...
