REAL Key Limes! With those shrimp, those Key Limes would probably make an amazing ceviche as well. Also the channel Key West Kayak Fishing actually swims around the mangroves and catches his own lobster by hand when they are in season there.

I grew up in a strictly no-mayo household, but as an adult I learned how to use it proportionally (not goopy), like a touch with some mac or potato salad, a light swipe on a sandwich (with mustard too), and even cooking with it (it works well in meatballs).

Welcome to Florida Chef! I just can't watch Chef Gordon cook while I'm hungry!
💪💪..keep going chef!!
Most people have no idea that a ripe lime is NOT that deep green color you get at the superstore. They get yellow-ish as they ripen, and those brown keys are like a brown banana-- just past ripe with a completely different taste than you get from from a store key thats green and feels like a golf ball and is so tart and sour it makes your eyes water.
Nice! Chef Ramsey! Thank you! Great looking sandwich! 🥪
