They have been eating for longer than you have been cooking, so I would say they have a knowledge of when food is too dry, not hot enough, or even just taste crappy! 20:23 WOW! Thats the 1ST TIME I've seen people on this show actually be excited to learn. To acknowledge the opportunity they have. Fuck man, it took this long. Say what you will abiut Ramsay, but when your restaurant is SHIT, and he(a Michelin star Chef) offers you help, you fucking TAKE IT. You can still hate the guy and learn from him. You don't 'have to like your teacher.

Brian was the perfect example of the motto, "If you meet one asshole, that's normal, but if everyone you know is an asshole, then maybe you're the problem." He finally half-admits it at 21:15. Yes, his job is a hard one, but that doesn't justify lackluster service, and butting heads with anyone who points that out doesn't fix the problem. I'm glad he learned that lesson. The food critic, though... how are you gonna show up to a restaurant that is obviously over capacity, and then complain about it? Show up earlier if you're going to be reviewing their food. What an arse.

Are you saved friend? If you died tonight will you go to heaven or hell? God Almighty, the Creator was manifest in the flesh. He came into the world to take away the sin of the world. He gave up his own life to save yours. His sacrifice on the cross paid the price for your redemption with his own blood. On the third day he rose from dead and offers the gift of salvation and forgiveness to those that repent and trust in him. This is the Gospel which means the Good News. Turn to Christ and live. John 1:1,14 KJV In the beginning was the Word, and the Word was with God, and the Word was God. It’s truly incredible that Gordon Ramsey is so down to earth, caring, and empathetic…because he could absolutely be a pompous egomaniac and people would far more often than not accept it because of his skill and success. His heart is the thing that stands out most to me about him and you see it in every episode but really see it here. I’m extremely happy he was able to reignite the Brian’s passion for cooking again and that his family became more understanding in the process…and you could really see how much they all deeply appreciated Gordon and that it was not an act for TV. Just the fact that Gordon is willing to share his own family Shepherds Pie recipe with their family speaks volumes about his character. It would be so easy for him to do the opposite and not allow anyone to have success stemming from that but he doesn’t….and I truly believe he’s an absolute gem of a chef, leader and mentor, and a human being. ❤️

There's a reason why food critics usually use aliases (and sometimes disguises)/have their face hidden in the portraits that accompany their columns, and it's so that they can get an accurate picture of what the restaurant and food is normally like; the critic can be reasonably sure that they weren't just getting special treatment if they end up having a great experience and readers can look forward to equally great treatment if they choose to go. I don't think I've ever seen a food critic tell a restaurant up front that they are a critic before demanding special treatment/dangle the prospect of a good review in order to get their way ("Do you even need a review?")
