    I'm so happy to read in the comments that the place is still open and the food is good. I noticed the absence of Chef Ramsey trashing out the kitchen organisation, which means they were doing a fantastic job in the department. The real issue was the food. The family seem like such nice genuine people that were truly greatful. One of the best episodes.

  • @vitorfernandes651

    @vitorfernandes651

    2 жыл бұрын

    Exactly. I’ve worked many years as a waiter. Most times we don’t pass on the complaints because chefs are usually psychos. Other times the blame will be on the waiters. Other times the blame will be on the customers. So we just don’t say anything. So in reality the only ones who actually know the issues are the waiters.

    so true! i’ve worked as a server and the last place i worked at had no formal chef, just one girl who had to prepare all the food, do all the dishes, and deliver it to the tables. it was horrible!! if she got a large order, the kitchen would be backed up, and tables would sometimes wait an hour for just a dessert. but i would have never said anything to the owner, because i didn’t want to be disrespectful. restaurants should really do anonymous surveys for servers to speak on these problems freely.

    I think the key to what has allowed Pantaleone to remain successful after this episode aired is that Pete WAS a great cook in his day, but his own confidence in his ability ironically blinded him from changing with the times. This was Gordon Ramsay's way of teaching an old dog new tricks. Really inspiring and encouraging that you can always return to greatness at any stage in your life.

    What an amazing episode honestly. Pete probably locked up and held on to his past success to avoid facing reality. But to see the man have an open mind made a huge difference. He actually listened to the opinion of locals, understand what a successful pizza place looks like and gave up his facade that he knows whats good or not is why they did well. Still open today because this man was more open minded than all of the other subborn owners unwilling to change. Arrogance really prevents growth and change, and this man showed other failing owners how they need to respond to Chef Ramsay.

    @@pearline4684 i think you will find most British TV cooks and chefs worked their way to the top as you put it. Nearly all of them trained and became professional chefs/cooks before fame. Nigella Lawson was famous because of her politician dad (who used to do what Rishi Sunak does now). Even Jamie Oliver was discovered when he was working in a restaurant and in a documentary about a restaurant he was working at he talked about things as part of the documentary.

  • @twatmunro

    @@cliffhulcoopofficial8075 -- Jamie Oliver was picked for his youth and his looks, not because he was a skilled cook who 'worked his way to the top'. His food has always been pretty fucking awful and he's never actually run a successful restaurant. He got investment funding to start a chain, but it was never profitable. Nigella was actually more famous because of her husband, John Diamond, than because of her dad. It was that documentary about her caring for him and his family while he was dying of cancer that really put her on the map. But Nigella's family used to own Lyons (big historical food business in the UK) so she does have a family tradition there. As with Jamie, her looks were the real selling point.

    @boneshakerbaby - agree 100%. I like that at the end, it was all done with respect on both sides, as Gordon wasn't as brutal as he sometimes is. Just a proof, if you are honest with him, and want to improve - he will actually help you and give an advice. And he will appreciate the honesty (as most people should/would). If you bullshit him... yeah, this is not gonna fly at all :) But it is not this particular "kichen" fault as such. Basically the main guy doesn't have enough experience. He has a lot experience in his place, and he is confident that he is doing OK. But he has nothing to compare that too. Doing something for 37 years, and not adapting, not moving forward, not being flexible, being too confident - nah, this is not gonna fly. Also missing the experience with being a chef in several+ other restaurants, other places, or even ohter countries. Just a simple life experience of working in multiple places (regarding your profession). Even somebody like me, would know (not connected with food industry in anyway). But it I was a chef in such place, I would be curious. I would pick the top 20 places in Denver, with different food choices. And simply go there, even once every 2-3 years, as a chef, and just eat. Nothing more. Just taste the food, taste what other people are doing, compare that to food that I'm cooking, and be honest with myself. The lack of comparison to other "products"/restaurants on the market, and dated confidence was his main issue. Note: and his wife is also a proof of his mentality: "...I've been your partner, you haven't always been mine". Such a simple statement, but also powerfull.

It's very existentially difficult to admit that he has been drifting to nothingness (performance-wise) because (perhaps) of his institutionalization within his business. He was kinda like those people who won't stop ranting about how they were so popular back in highschool but now suddenly invincible. There's an understandable reason, though, his confidence was based on his work and the fact that back in the 80s, his pizzas were the best and even winning multiple awards. The problem is he got complacent. He thinks he already knows it all and that nothing is going to go wrong no matter what because, after all, he WAS the best right? And if customers can't appreciate his work, then it MUST be their fault right? Again, after all, he WAS the best? That's just ego talking. His ego was so big he didn't even thought about the fact that he's getting old, and a few more years, he will have to pass the title of ownership to his son because he definitely doesn't trust his own son to be able to carry the restaurant, so he does it all himself because he WAS The best right? No one can do better than him in his mind. In that age, he should already be teaching his son how to manage the restaurant by himself with him only acting as guidance. Because when you get lazy due to complacency, it WILL show in your work. Luckily, the restaurant is still thriving now and he learned his lesson. It took a hard-beating and reality-check, but it's what he needed.

I can see how it would be a huge shock to learn after 30 years that while you have believed you were a master of your craft, you were actually putting out a sub-par product for a large percentage of the time. I think most people would initially be in utter denial, the sunk cost fallacy is a very real cognitive bias that we're all susceptible to in varying degrees. You would need to be extremely strong mentally to admit to yourself and your family that while you thought you were at the top of your game, you're actually nowhere close. Pete swallowed his pride and it was one of the most beautiful and rewarding episodes I've ever seen.

Sure, it's hard for him to let go of the past glory and he's in complete denial at first, but hey, we see him actually COOK MEALS! Not just throw it in the microwave. He actually made fresh dough and baked fresh pizza and made fresh pasta. Like, you could see that he actually was experienced in restaurant work and he also was passionate about what he did. @@alienlife7754 If you're so daft that you don't understand that family business is supposed to pass on to the younger generation at some point, you have a deeply flawed mindset. Only someone too young to understand, or with just as much hubris as it'd take to be like Pete in this episode, could fail to see the issue there.
