If you are watching her channel for the first time and wondering if her food is good and worth making.....the answer is a big fat YES! I never likes enchilada sauce until I used her recipe for enchilada sauce. She a good teacher, too.

Rachael, I’m from Harlingen (class of 85) and moved to NE Ohio in ‘86 to marry “my Jim”❤️ Valley food is the best in the country and I’m thrilled to have found your channel! I cook a lot of the same dishes you do however there are a few you do that I was afraid to try. Thankfully you have taken the guesswork out of it and given us the confidence to try! I also follow Arnitex-he’s from the valley too and does BBQ. I’m a homesick Texan but thankfully I can enjoy your recipes and feel like I’m home in Texas.

Oh my gosh, Rachel, these are delicious. My husband and I moved from San Diego, California eight months ago to northeastern Florida. We both were born and raised in San Diego where Mexican food is so delicious. As much as we love it here in Florida, we miss the Mexican food. Because of you, I now make my own flour and corn tortillas. This dish is outstanding!!! . Because of you, we don’t miss food from San Diego. Keep up the great recipes.
