They actually talked about this in the game. Atreus asked why don't Kratos put him in the front. Mimir and him said they already tried. Because of the blood splatter always hitting Mimir's face. And he was just too use to the back.

According to the GoW wiki Mimir might have extrasensory powers that let him see and perceive things even when not facing them directly, because in a few occasions he mentions things that he couldn't directly see.

I wish there was a way to restore him to his full-body form. Mimir deserves to be able to enjoy the world as he pleases and rekindle his relationship with Sigrun.

He's done a lot of evils in his past, don't forget kratos is covered in the ashes of his wife and child hundreds of years later, in these games your mistakes haunt you forever. The lesson is they don't define who you are.

I like to think that his giant eyes give him sight of things that he isn't even facing

What I’m saying is that Mimir knows the lands so much that he knows exactly what what everyone is talking about when they describe what they’re seeing. For instance, say somebody blindfolded you and put you in a random spot of a random room that is in your house or apartment. They open your blindfold and you don’t see the entire room. You see a section of it. You then look at the spot without turning around and you immediately know where you are. Maybe you see a certain scratch on the wall that indicates that it’s the bedroom or something and because you know your own home well enough, you can determine what people are talking about when describing the room or what’s in the room. Mimir knows the realms so well that he can basically look at the small details within the terrain that he is limited to looking at and determine exactly what is behind him or in front of Kratos

he doesn't, he actually just assumes what's being looked at, I know this because Mimir tried facing forward but just couldn't handle seeing all the mayhem and blood and guts so he preferred facing backwards, hence why he was so flabbergasted from the death of Heimdall

I was really hoping they’d add a voice line for when kratos dies like “mmmppph!!!” Or “Aw ya landed on me head…kratos??!” It is an interesting bit of detail that Atreus/freya warn you of dangers to your left and right, and mimir, hanging from your buttcheeks, warns you of dangers from your back.

Mimirs Jewel eyes allow him to see everything wherever he is at, to me that means if anything he is able to slow down his vision and focus to allow him to continue yo see while being shaken about while Kratos is battling, hence why he is also able to see threats coming nit just behind Kratos but sometimes in front of him as well. Tyr gifted him those eyes, and Tyr himself when not imprisoned is able to see all around whichever realm he is in at any given time. Some en if Mimir is being strung about he can still see the world around him very clearly.
