Garlic Parmesan Zucchini Crisps Recipe | Cait Straight Up

Simple recipe for tasty Parmesan Garlic Zucchini crisps with truffle oil. You need few ingredients to cook this delicious recipe. One zucchini makes a good amount of chips! This recipe does not add any extra calories with egg or breadcrumbs and delivers a tasty, light zucchini chip snack with lots of flavor!     These look great! I’m going to try them. I also slice very thin zucchini slices & dip them in egg then use cornbread mix in a ziplock bag (shake-n-bake style) then lay them out on waxed paper on a large cookie sheet. Put in the chest freezer overnight then place in a freezer bag. This allows you to fry up as many at a time as you want. One of my grandma’s old tricks.😉

    You're doing a great job, Cait! The zucchini crisps are so easy and delicious......I'm a pretty good cook, and I have to say I like your approach. Fast and simple. We also love love the empanadas! I hate to say it, but the empanada dough you make is way easier than the complicated recipe I have used in the past, and it tastes better for the fillings I use.     I would suggest mixing oil through the slices by hand. When you do it with a spoon many will stick together and you won’t get them covered both sides. Also with the cheese. Would also put it over it after I lay them down

    Sadly no truffle oil but i have two different kinds of truffle salts, black truffle and summer truffle. So I will have to try those out in lieu of the oil, and then just precoat with a nice olive oil before hand. thank you for the idea. Also may try doing these in my air fryer.

    Wouldn’t it be easier to mix the garlic powder oregano and oil in a bowl then brush it on while the zucchini is still a pan??? This way you know every piece of zucchini is getting garlic powder, oregano and oil....Then sprinkle the cheese on top .. again this way every piece of zucchini is getting cheese ... I mean she had to do that anyway... shaking it’s just an extra step not needed... plus when you mix the garlic oregano and oil then brush on its a more consistent flavor... Work smarter not harder....

    I was just gonna say this. Just add your spices to the oil in a bowl, mix it up, dip each slice in to coat, lay them out on a pan, then sprinkle with cheese of choice. Much quicker and easier method, same results!

    Don't be afraid to use your hands. Instead of tossing the zucchini and parmigiano, just flip each slice in a bowl of the cheese. Less wastage, better coverage and the slices wouldn't break.

    An oil sprayer makes it easy to coat all of the pieces while they are laying bout flat. Just flip and spray the other side

    Grapeseed oil is for cooking olive oil is for dressings or a finishing oil. Smoke point of olive oil is 240F smoking point of grapeseed oil over 400F

    You're referring to EVOO. EVOO is typically for dressings, but regular OO has a higher smoke point.

    Looks good! How come you do not use minced garlic? Crush by garlic press, frozen garlic or in a jar? It would bring out the garlic flavor and is purer than garlic powder (contains salt & chemicals). How would a Asiago & Fontina mixture be? I am a garlic & cheese lover. I agree you don't need egg and breadcrumbs that increase calories and takes away from the cheese/garlic flavor. However, this wonderful side dish is not completely healthy since cheese and even olive oil increases cholestrol. When you are young you may not have to worry, but as you age you do have to be more mindful.

    Karen I experiment with lots of different combinations of things! And actually I’ve heard olive oil can help lower LDL (not a doc at all!) I typically serve these more as an app but sound great as a side too☺️ thanks for watching!

    Thanks for your reply. You didn't state why you don't use fresh garlic. The powdered garlic is fake with salt and chemicals. If one doesn't want to take the time to press garlic there is Dorot frozen garlic cubes that are good. I know olive oil is healthy, but too much raises cholestrol. That information is coming from my cardiologist-nationally famous.

    Just an FYI. I make these. We found we prefer these without the oregano. Kind of overwhelmed the dish. To each his own... 🥒🍆☺

    Catherine Minor I don’t think they will...I made cucumber chips and dehydrated them a couple of hours later they were somewhat soft but when I took them out they were crisp but then again it could be my house air

    Make life easier .....cut tge zucchini, lay it out on tge pan brush yes I said brush olive oil on each piece ,salt,pepper,onion,garlic powder put your generous amount of cheese on each piece ,its less sloppy and you can rest sure every chip has cheese ,bake and you'll be the star of the.kitchen your family will adore you
