Every time my Ron and i dine at an Italian restaurant Eggplant Parmesan is gonna be my choice from the menu. I love Italian food, but there's something about eggplant Parmesan that I love especially when it's made fresh. I love it the most when it's not breaded because I think that breading and frying it is just to much. This is an easy recipe and I'll show you how to make it Step by Step with simple ingredients, my mama showed me how to cook and she always explained the steps clearly and now I do the same. ●BAKE 425° Eggplant slices 25-35 minutes (flipping once)
● Once assembled with meat filling Bake 375° 20-25 minutes
INGREDIENTS (Baking the eggplant)____________________
2 Med Eggplants (sliced 1/2 inch thick approx)
1/3 -1/2 C. Olive Oil (don't over do it)
1/2 tsp Onion Powder
1/2 tsp Oregano
1/2 tsp Sweet Paprika
Salt as needed
Pepper as needed
INGREDIENTS FOR MEAT FILLING _______
1 LB. 93/7 Ground beef
1 Med finely diced Tomato
1 Med diced Orange Bell Pepper
1/2 Med. Finely diced Onion
3 Lrg Garlic cloves (grated or minced)
1/2 tsp Onion Powder
1 tsp Oregano
1/2 tsp Sweet Paprika
Salt as needed
Pepper as needed
1/2 - 10.75 oz. Can Tomato Puree
Fresh Basil
1/2 C. Water

Oh my dear Rachel, you have both Johnny and me smiling ear to ear as I had to show him this recipe. Eggplant parm is one of his favorite dishes and I sincerely love this quite healthy version of this dish. Now that I can buy Impossible Beef by the pound, it will be perfect to use as the meat in this dish. It has a wonderful taste especially once the spices and tomatoes will go in. Hi Rachel, I like your version of eggplant parm.. Being Italian, our version is somewhat different but I like your version. You could also put a thin layer of ricotta between the layers. That is very good, as well. Another great recipe. Take care🤗

Thank you for another way to make eggplant I came from a large Italian family that made an eggplant casserole with hard boiled eggs and sauce all vegetarian. Don’t get me wrong ,it is delicious,but I love your eggplant parmigiana idea too. I’m going to try it as soon as the eggplant is ready to harvest from my garden. Meanwhile I might try to improvise with zucchini because they are here in abundance. Thank you again I love watching you 😊

Hey Rachel, this looks delish! My Dr's want me to eat a Mediterranean Diet, so all this would work great into it! I wonder if u could chop the eggplant into chunks, cut back on the meat and put it on top of a Grilled Fish? I would love it if u could give us more fish recipes + it's a tender, easy to digest meat. The best eggplant parmigiana that I have ever had was in Sicily. Oh my goodness. It was baked, not fried, and served as a starter as a tiny casserole and not a main dish. I'll never get the chef's family recipe for his parmigiana but I love to play around with recipes. This one looks delicious. I've not had the dish served with a meat sauce but I know my husband will enjoy it. And, yes, I do want you to create a video featuring that lovely salad with homemade dressing!
