How to Make the Best Eggplant Parmesan

Learn how to make the best eggplant parmesan at home! It’s better than any restaurant version I've had and uses homemade breadcrumbs for an even crispier crust. You’ll learn how to bake or fry the eggplant, so you can use whatever method, depending on your preference. Pair it perfectly with pasta or meatballs and a nice Italian-style salad!

INGREDIENTS
2 large eggplants
1/2 cup all-purpose flour (see notes)
3 eggs
1/4 cup olive oil (for fried eggplant method)
1 1/2 cups breadcrumbs
1/2 cup parmesan cheese shredded
2 teaspoons Italian herb blend
1 teaspoon garlic powder
1/2 teaspoon (each) salt & black pepper
1 1/2 cups marinara (if you like a lot of sauce, you can aim for 2 to 2 1/2 cups of sauce)
1 lb mozzarella cheese
1/3 cup parmesan cheese shredded
1-2 Tablespoons fresh basil chopped
1 teaspoon fresh oregano chopped

    Eggplant Parmigiana is NOT an easy weeknight dish which you hint at by relating your Mom and Aunt’s moaning about the time to salt, prep and frying the eggplant AND cleaning up . Plopping the finished dish into the oven is the easy part. Mom and Dad taught me to fry the eggplant which like meatballs is messier than baking in oven . Try both methods like you suggested at the beginning of the video. Salting the eggplant for ten minutes as you suggest is the most common method , but I prefer the Guido method of putting an eight inch high pile of sliced eggplant in between two plates and putting a couple of heavy medical books on the top plate.for an hour . You easily get 1/2 cup of bitter eggplant juice expressed out of the eggplant. Some like the eggplant to be peeled. You taught me a couple of tricks that I am going to try. Keep coming with the videos, please.

    Half Italian and my friend who is Italian from New York she taught me to brush the eggplant which I cut just over a quarter and I like it kinda on the thick side and I don’t care if it’s peeled or not peeled but I just leave it peeled unpeeled because I like it that wayI brush it with mayonnaise if you Hellmann’s if you’re on the West Coast it’s Best foods and dip it in breadcrumbs you could even dip it in half oregano and garlic powder on it. Bake it in a 425° oven for maybe 25 to 30 minutes just until the Golden. And here’s the key you do not have to flip it just leave it there on parchment paper in your baking sheet. Absolutely delicious and just go from there with whatever recipe you’re doing.💋

    I grew up Italian and my mom was such a wonderful cook. She left my sisters and I many gifts. One of our favorites was her little book with all her recipes that our grandma left her. Her ravioli and stuffed veal breast are works of art. How lucky to still have all these great recipes. I made your chicken parm and it was a hit! Of all the ingredients that went into all these dishes, I have to say, that love was the perfect one!

    Hi Bethany This recipe title made me look twice, Eggplant ?? I then googled it, we call these Aubergine in the UK, confusion over.     @@EnlightnMe48 the egg should be plenty good for getting them to stick! I've used softer bread at times for breadcrumb and never had an issue. Make sure the egg is coating everything completely!

    Your mother must of been italian and i love italian food.I am gonna try your stuff soon.I just need to decide which one.The marzano sauce looks really good and we sell them tomatos at my job.My favorite italian restraunt closed but they were authentic and had this braciola that was my favorite.     I will be making this soon. I bake everything if it is an option on frying. My favorite Italian dish every time! Drew may like to try my all-time favorite dish. I serve it with fish especially - roasted eggplant. It also needs to be sliced the way you did these, Bethany. Roast on the middle position for the rack at 450 degrees F.

You're not the first to say ground chicken is hard to find. I buy mine at a local market, but you can certainly make your own!
