干烧虾球 Gon Siu Prawn | 酒楼菜色 家常做法 大众口味 | Mr. Hong Kitchen
以前在酒店工作时常会做这一道海鲜料理 很特别的口味但在我们大马比较少的餐馆有买 所以这一期 来 分享给大家

Ingredients (Diana Aw)
1. Prawn 200g remove shell and leave the tail. Devein and wash. Pat dry and marinate with little salt first. Then mix with little egg white. Add little corn starch and mix. Lastly add little fragrant oil and mix well.
2. Sweet pea 10pcs, cut diagonally half
3. Coriander stem, diced
4. Garlic 3 cloves, sliced
5. Chilli padi 1pc, diced
Sauce (mix together)
1. Bean sauce 1tsp
2. Tomato sauce 1tsp
3. White vinegar 1/2tsp
4. Sugar 1tsp
Method
1. Heat wok with little oil, stir fry the sweet pea with little salt till caramelised. Set aside
2. Saute the prawns till both sides are brown, not fully cooked. Set aside
3. Add little oil and stir fry the garlic and chilli padi till aromatic. Add in the sauce and cook till sugar has dissolved. Add little water and coriander stem and mix well. Add in prawns and sweet pea and stir fry under high heat.
4. Serve and enjoy! 💕

請問 A hong你是用什麼牌子的紹興酒,我試用了很多牌子都找不到那種煮抄檔的酒味,吃過外面的魚頭顱,那酒的味道香的不得了,可是就是找不到.

其实都ok看你自己的要求一分钱一分货 其实你说的那种味道是就从锅边下经过高温所喷发出来的酒香味 要达到这个效果呢锅子的边要有高温 最好是金属面的锅
请问如果不用甜豆,还可以用什么菜配它比较合适?

可以用豆角 切短一点 但要先炒一炒熟了才和虾肉一起炒

Chef Hong, your film colour grading are too dark, vignette way too dark & artificial 😅…. You need to hire better post team. The mood not suitable for your character. Just a friendly advise, I like your recipes & they all work.
