Professional knife sharpener Matt Hendricks sharpened a knife that was to dull to cut paper to sharpen enough to shave hair in under 2 minutes by hand using Japanese water stones. This is not how I normally sharpen the edge of a knife, and my goal here was not to creat the sharpest, longest lasting edge, but rather to see how fast I could do it. I just thought it would be fun to see how fast it could happen. If I were to do it again I think I could get under a minute and a half fairly easily.
