Recipe: Creme Caramel or Flan
Creme caramel or flan is a custard dessert that has this layer of burnt caramel on top, and it's surrounded by this delicious caramel syrup.
Ingredients:
- 4 whole eggs
- 2 egg yolks
- 1/2 cup sugar
- 2 ½ cups half & half
- 1 teaspoon vanilla extract
For the Caramel:
- ¾ cup of sugar
- 1/2 cup water
First, arrange your ramekins on a baking pan. You can use anywhere from 4 to 6 depending on how big your ramekins are.
To start we're going to cook the caramel. Combine your sugar and water in a small sauce pan and simmer it over medium heat, stirring it occasionally until the sugar dissolves. Let it cook until the caramel turns into this rich amber and color. I would say this takes about about 20 or 25 minutes. But during the last few minutes make sure you keep a close eye on it because once it starts to turn a golden color it's going to start darkening quick. Now, while it's still hot, carefully pour a little bit of the sugar syrup into each of your ramekins, just enough to coat the bottoms; if the caramel starts to get hard just gently reheat it.
Now preheat your oven to 300° F. In another saucepan, bring the milk and sugar to a simmer on medium heat and gently stir it to dissolve the sugar again. This will take 3 to 5 minutes, then let it cool for a bit while you start working on the eggs.
Now in a large bowl thoroughly whisk the eggs with the yolks. Then slowly whisk in the warm milk and then add the vanilla. The eggs are going to leave behind these globby yolky pieces so we want to strain it out.
Strain the mixture through a sieve into a pouring cup. Then fill each of the ramekins near the top. Add some hot water to the roasting pan until it reaches almost halfway up the ramekins, so basically half of the pan. This will provide a little bit of steam and soft even heat while you're baking it so it doesn't burn the custard. Cover the entire pan with foil and then bake the custards for about 35-40 minutes until they're set but still jiggly.
Remove the ramekins from the water bath and then let them cool on a rack to room temperature. Then cover it with some plastic wrap and refrigerate it overnight.
Now comes the fun part. To serve, pour 2 inches of really hot water into a small bowl. Dip the ramekin in the hot water for about 10 seconds. This is going to help loosen all the caramel sauce up. Then run a thin knife around the edge of the ramekins to loosen the custard. Now take a plate, put it on top of the ramekin and then invert the whole thing. Look at the colors, it's like ombre! Make sure with each bite, you get a little bit of the sauce. Enjoy, Bye!

    Just made this last night and it came out beautiful and delicious and it was so creamy. The only problem that i had was the caramel it took me about 45 minutes and it was still white and it started to stick into the sides so i just added that to the molds and it came out good but without the golden brown color. I will later on make it again and see how it goes but thanks a lot for the recipe!!

    Love your cooking videos! They're simple and sweet & the results are very pleasing. I have a request: Will you please make ube cupcakes? They're a specialty from a Filipino bakery in CA known as Valerio's and are even better when topped with a tiny cream cheese square. Sadly, I dont have Valerio's in the state I live in (I was in CA for vacation),but I would like to be able to make those wonderful cupcakes here in my home.     Awesome recipe! We got flan a lot here in mexico as a homemade casual dessert or even in fancy flavors like jicama flan at some restaurants!. My recipe its one can of condensed milk, one can of evaporated milk, 4 eggs, 1 large bar of cream cheese (190 grams) and vanilla extract, all mixed in a blender!

    If you temper the eggs first with the warm milk mixture than you won't get the lumpy egg yolks and you won't need to strain it. Just a tip. :)

    You can also use unsalted butter to rub around the cups so it would be easier to remove the custard :)

    It was hard to make the caramel sauce becuase mines kept crystallizing too fast and it wasn't turning to the right color, but I found I easier to not stir the water and sugar, instead, I just wiggle the sauce pan a bit when it starts to simmer... love this recipe!!! Can't wait until more recipes cone out. :) thanks!!!

    you can substitute the half and half with just regular milk - it will still work! the half and half has more fat so it give it a creamier texture.

    When you have a recipe that calls for just egg yolks, what do you do with the whites? I always end up throwing mine out, b/c I don't know what to do with them, & I feel like thats wasteful. =) Could you possibly do some savory recipes that include just egg whites!? Thank you!     thank you so much! alot of times when i have extra egg whites, i use them for baking - souffle or macarons. but for savory, i recommend making an egg white scramble, or fry them up and chop them in a salad for extra protein. i'll try to come up with something savory and fun for egg whites though. thanks for your comment! :)

    aw, that's frustrating! did it burn too fast? i would suggest taking heat down a little and then letting it caramelize slowly... then as soon as it starts turning somewhat yellowish-orange color, take it off the heat because it will continue to brown a little more. good luck and keep practicing! you'll totally get it soon. :)

    it's half cream half whole milk! they sell it at the grocery store just as that and it's mostly used for coffee, but i love how creamy it makes the flan. :)

    yes it's half milk half cream - it is cream for your coffee! you can definitely use low fat milk instead. i just found this makes the custard much creamier. :)

    They are just air bubbles. From beating too much air in the mixture. A little tap will get rid of those. You should chill out.
