Ingredients:
1 stick unsalted butter or 1/2 cup (or 113 grams)
4 oz. bittersweet chocolate (or 113 grams) - I'm using 70% cocoa
2 eggs
2 egg yolks
1/4 cup sugar (or 50 grams)
2 tablespoons flour (or 10 grams), plus more for dusting
extra butter to grease the molds
Directions:
1. In the top of a double boiler set over simmering water, heat the butter and chocolate together until the chocolate is almost completely melted. While that's heating, beat together the eggs, yolks, and sugar with a whisk or electric beater until light and thick.
2. Beat together the melted chocolate and butter; it should be quite warm. Pour in the egg mixture, then quickly beat in the flour, just until combined.
3. Butter and lightly flour four 4-ounce molds, custard cups, or ramekins. Tap out the excess flour, then butter and flour them again. Divide the batter among the molds. (At this point you can refrigerate the desserts until you are ready to eat, for up to several hours; bring them back to room temperature before baking.)
4. Preheat the oven to 450 degrees. Bake the molds on a tray for 6 to 7 minutes; the center will still be quite soft, but the sides will be set.
5. Invert each mold onto a plate and let sit for about 10 seconds. Un-mold by lifting up one corner of the mold; the cake will fall out onto the plate. Serve immediately.

hi, u can let it cool slightly, however if you constantly whisk when adding to the egg mixture, it will avoid cooking the egg and clumping. good luck!

hi anthony! you can undercook it by a minute to have more oozing. i prefer it just slightly oozy so that it's not too liquidy on the inside. :)

yes, you can definitely bake it for 5 minutes. it'll come out more lava-ish. enjoy! :)
I made these last night (according to the recipe) and although it was quite delicious I have to critisize some things. Because of the excessive use of eggs the cakes were a bit hard and not as soft and moist as I was used to. Actually they were quite dry. I have tried out multiple lava molten cake recipes and the best one I have yet found doesn't involve eggs but egg whites. Also before baking you shall let it rest for half an hour. In my opinion this recipe is the best one ever!

If I were to line my cupakes with liners(sprayed/unsprayed that u have to tell)will it work equally good.Also if i don't use liner & just spray some non-stick without flour coating will it work??
