First time trying Filipino food... and I'm hooked.

Today we're in the Grant Park neighborhood of Atlanta, GA. I'm so excited to dive into Atlanta's thriving Asian food scene, and I'm starting with Filipino food. I'm pretty new to this cuisine, and after this trip to Estrellita Filipino, I'm hooked! The rich flavors of adobo and lechon kawali instantly converted me. The legendary Filipino BBQ technique is on full display in this Michelin Bib Gourmand restaurant, drawing in hungry diners into the small dining room adorned in curated, brilliant Filipino art. Hope, the co-owner, taught us about the elements of Filipino cuisine. Her enthusiasm of teaching her customers about Filipino food is so evident and you can really feel the pride in everything they do at Estrellita.

    When I woke up one morning and realized the beautiful, smart, 20-year old Filipina I married the day before didn't know how to cook American food I thought I was going to starve over the next few years until she could learn. She offered me a deal, in that she would cook Filipino food for a few days, and if I didn't like it, she would not cook it again. Seemed reasonable, so I agreed. Well, she cheated. She cooked pork adobo for me the first night. It was so delicious that I ate it all, and asked her to fix it again the next night. It was so addictive that for four days that was all I wanted for supper. I've since learned to eat and enjoy many more Filipino dishes over the past 50 years together with her. And we've spent five decades exploring the world's cuisines side-by-side in the kitchen. Our kids picked up on the love of cooking, and are now teaching our grandkids the love of not only the Filipino food they grew up with, but also many others.

    What a beautiful story. One we can all learn from. I am so excited to know that this is just the beginning of a lifetime of enjoying and exploring Filipino food.     The sauce for the lechon kawali is a liver sauce. The sweetness usually comes from the type of vinegar we use. Its a coconut vinegar.

    So nice that you mixed the rice it the bowl with left over adobo sauce and adding the lechon, it's actually very Filipino. Left-over adobo sauce mixed with rice is already a meal in itself. :)

    When you took the rice and added it to the adobo juices at the bottom of the bowl, I said out loud, “YES girl! You’re doing it right!” Proud Filipina here loving how much you appreciate and are enjoying Filipino cuisine. Those dishes literally had my mouth watering.     The way you devoured all that food is so filipino, i mean im not even 100% convinced that it is your 1st time trying filipino food at all, the way you ate the bbq and adobo is so pro(dipped the rice in the spicy vinegar and ate it with the bbq chicken)❤❤

    I immigrated to the US in the summer of 1990. I was 9 yrs old and starting in the 4th grade. Our other family members that were already here tried their best to let us know of the many social norms, the do's and dont's, but they failed to explain to me that bringing lunch from home was a "no-no" especially if you're bringing something exotic like Filipino food. Well on my 1st day, my Mom had prepared pork adobo over rice for my lunch and I still remember seeing the disgust reaction from my classmates faces when I opened my lunchbox aka Tupperware. Eh, you can say we were just kids back then, but it was the last time I ever brought food from home to eat at school, middle school, high school, college and I still hesitate to bring home food to work. Your reaction to tasting Filipino food is helping ease that childhood pain in me. Thank you.

    Girl in Hawaii we say “ you can pound.” Hawaiians and locals can pound. My father made the best adobo but then everyone’s parents make the best adobo. Dad was born in 1887 so no shoyu and when he got done it was roasted brown all over after the reduction with the right amount of vinegar,salt, bay leaves and garlic. I don’t know if it’s Visayan Style as he was Visayan-adobo not soupy but roasted 🌺

    You're eating the food correctly!! 🥺 So many people try Filipino food without rice and it's drastically different if you eat the 'Ulam' or dish on it's own. The rice just takes the edge off.

    The Lechon Kawali needs more frying to give the skin that golden brown color and crispy, crunchy, crackling texture when you bite into it. It comes with a tangy and sweet liver sauce.

    I must say that the Pork Adobo looks really good. You can tell that the meat has absorbed the sauce pretty well to make it flavorful and that it has been cooked to tender perfection.

    Good that you like such food! Overall, Filipino food is a combination of Spanish, Mexican, Chinese, Indonesian and American food, San Francisco native and world traveler here! I ate Filipino food from Vancouver to San Diego to Boston. Eating Filipino food in The Philippines is quite another experience!

    You'll need to learn how to use the spoon and fork Filipino-style: Use both hands and use the fork to spear the food chunks or to place the grains onto the spoon. Hold down the bigger chunks of food with the fork and then use the edge of the spoon to slice the food into smaller portions; this means that you won't need a knife most of the time. If you don't learn the two handed style, it will take you much longer to eat.

    You got it just the way we eat adobo down to the last sauce. Next try the sisig, pansit, sinigang na baboy, fried boneless bangus, the hot spicy bicol express and many more.

    As for a Filipino who is sensitive to rice, this video made me crave our dishes even more. Thank you for eating our dish so deliciously. Maybe next time you can try the HALO-HALO. It's a dessert which means mix-mix. So you are supposed to mix it all together thoroughly before eating it. I'm sure you're gonna love it.

    Saw the adobo at the start and was happy that the look of it was correct. Somehow, I knew it would be tasty that my mouth instantly started to water on reflex and started craving for it over the fried chicken I was eating for dinner.

    We use beef blood. It makes the dinuguan creamier and doesn’t have that iron taste in the blood. ❤

    Sometimes if U are in a budget but your Craving for Adobo, Cooking Rice put fresh egg together to get Boiled Egg, then cook plain Adobo sauce and put the Boiled Egg on it, will get you thru Lunch & Dinner already.. 💕🇵🇭
