FIDEOS: Classic Mexican Comfort Food, Perfect in its Simplicity

When it comes to Classic Mexican Comfort Food, Fideos is high on the list. This dish is perfect in its simplicity, and it also happens to be very inexpensive to make. If you're a broke and starving college student, you definitely need to make this. Fideos can be enjoyed as a side dish, as you'll see in this video, or you can have fideos as a soup, called "Sopa de Fideos." Either way, you're going to love it. Read on for the easy recipe.
Fideos
1 7oz. package of fideos (or vermicelli cut into pieces)
1/4 of an onion, chopped finely
1 8oz. can of tomato sauce
2 - 4 cups of water (I used just over 2 cups. If you want this as a soup, use 3 or 4 cups)
salt & pepper (I use approx. 1/2 tsp. salt & 1/4 tsp. pepper)
1/2 tsp. garlic powder
1/2 tsp. cumin
Heat a large skillet on stovetop over medium high. Put just enough vegetable oil in it to coat the bottom of the pan. When hot, add in fideos and stir continuously while they begin to toast. Add in chopped onion and continue mixing until most of the fideos are golden brown in color. Add in can of tomato sauce. Stir. Add in water. Stir. Mix in seasonings. Let it come to a boil, then reduce heat to low. Simmer for 15 minutes until fideos are cooked tender. Then remove from burner, let cool a few minutes, and enjoy!

Let me know in the comments if you grew up eating fideos. Did you have it as a side dish or as a soup? 🥣Also, are there any "dichos" (sayings) you or your parents have said? I'd love to hear them.😊

Idk why but the first time I had fideo was my high school friend's mom who made it. They're white as I am. I loved it! Now I've got my own family and I want to make it but never learned. West Texas also! Been one place or another between Lubbock and Midland my whole life. 🇸🇴🇵🇱

In my Mom’s 1950’s Mexican kitchen in So Cal, she used the very thin coiled vermicelli. And we did have it as a side dish. In lean times, there were 13 of us, she would fry up some hot dog “coins” and throw those into the pot. At 72, I still enjoy this homey treat. 👍🏼💕

Growing up we ate Fideo at least 4 days a week and loved it. When you mentioned “dichos“, that brought back a funny memory. Back in the 1960s My mom would ask us kids what we wanted for dinner. She would ask, you want enchiladas? We’d say no. She’d then ask, you want frijoles? We’d say no. After so many of our rejections, she’d finally say, “pues come caca!” 😂

I grew up in the southwest as well (Tucson). Mom is from Tucson and dad is from Texas (Uvalde). Mom made it more like a soup and she just called it “fideo”. I've also heard it called “sopa”. People in the southwest and from northern Mexico serve it more dry as a side dish and call it “sopa seca” (dry soup). Regarding dichos, the one that stands out to me was what mom would say if we had a scrape or a cut or bruise. She’s rub the area lightly and say “Sana sana, colita de rana. Dame un besito para hoy y mañana” which translates to “Heal heal little frog's tail. Give me a little kiss for today and tomorrow.” English is my first language, Spanish my second, and Spanglish my third 😊

Loved reading your comment. And, yep, that dicho was another one that made very little sense but was quite popular. I heard it a little differently. "Sana sana, colita de rana. Si no sanas ahora, sanarás mañana." Then one of my uncles had his own version which I wont bother to repeat! Lol We are so blessed to be bilingual because it's like living in two worlds at the same time.

At the age of 14 my blue-eyed, blonde Irish mother, who lost her entire family, was taken in by this wonderful family. One of the dishes she learned to make and loved was a very dry sopa. It was so similar to your fideo recipe. It was also served with freshly made flour tortillas. I don’t make it too often anymore but I still love it. Thank you.

I love that she included a list of those dichos in the back of the book. When I met her in person, I asked her if she'd heard some of the ones I grew up with. I used to get in trouble for singing at the dinner table, and my mom would say, "El que coma y canta loco se levanta." But, I'm proof that wasn't true. (At least, I hope so. Lol)

We use that exact same phrase as well. Here a few more from my family in Spain. When someone's standing in front of the TV or otherwise blocking the view: "El carne de burro no es transparente." For the kids when they're young to drive them nuts: "Tu sabes que es el cuento de la buena pipa? El cuento de la buena pipa es de cuento de la buena pipa..." (repeat for infinity). Spanish outlook on life (reference to the bulls in bullfights): "Mejor vivir como un toro que morir como una vaca." Growing up in New Mexico my dad always used to say "Frito Pie." I always thought it was a phrase until years later when I realized what it was. On top of that I used to go to the Five & Dime (Woolworths back then) in Santa Fe made famous in Anthony Bourdain's series when he panned it and was later made to apologize. I got my first Super Ball, Hot Wheels cars and Zozobra doll there every year. Over the past few years I make sopa de conchas once I discovered it. I'll have to give your fideos a go. I do make Spanish fideuá de mariscos in a paella which is very similar to your recipe (use paprika instead of cumin). I generally use bagged mixed seafood and about 31-40 ez-peel raw shrimp (we live inland and I'm cheap ;-)). I use the shrimp shells to make the broth used in lieu the water.

Our family loves our fideos as a side dish. The soupy fideos are okay, but we really like them as a side dish and thick like spaghetti. My mother-in-law makes the best. However, yours sounds absolutely wonderful. I can't wait to try yours. That was a great idea to add beef to your v Fideos. That would make a great one pot meal for a dinner. I grew up in New Mexico and I speak the language. However, I do have to agree with you. I grew up speaking Spanglish

Hi, Marcy! I’m not Mexican (I’m Irish!) but the Irish have a lot of Spanish I them! I was born and raised in El Paso, TX and also lived many, many years in Las Cruces! Oh, Marcy! I just stumbled across your channel while searching for Mexican side dish recipes. I grew up in Southern California but it's amazing how many of our stories are similar when sharing amongst with other Latinos. Growing up, sopa de fideo or sopa de arroz was a side dish staple with almost every meal my grandmother would cook. We often used the term "sopa" interchangeably whether it was rice or fideo. My grandma would make it the soupier way as you mentioned in the video, and kept the noodles long instead of breaking them into smaller pieces. And those "dichos!" I heard the EXACT same ones from my grandparents and my mom growing up. "Dime con quien andas..." If I got in trouble with friends lol. I often asked a lot of questions and was a bit of a chatterbox. Anytime I started asking too many questions, like "where are we going, what are we doing, what's for dinner" my grandfather would reply, "tolondrones!" Which I knew meant "shut up and settle down, kid" lol. I never knew what that meant until my grandmother gave me the full rhyme when I was older, but it was always clipped to "tolondrones!" in my house lol! The memories came flooding back with your stories, my eyes even welled up a little. 🥹 Subscribed con muchos abrazos!
