I'm not a trained chef. I'm just an ordinary mom who loves to cook, and who happens to have a background in television news. But after so many years reporting on all the bad things going on in the world, I'm in need of good news, and great recipes. I like to think of it as cooking with a pinch of faith, because every day I pray that God would bless the work of my hands, and somehow, He does.
I hope to post at least one recipe a week, and even have some of my friends join me in my kitchen to share their own tried and true recipes. Together, we can live life inspired.

Grew up on beans. Granny would cook a huge pot of beans every Saturday for the next week. Refried leftovers were the best.
Frijoles is my last meal before I die ....... Pinto beans are the foundation of my Mexican background. Add sopa de arroz and tortillas, salsa ...heaven scooped with tortillas .... corn..... and homemade flour...( I hate the smell of commercial tortillas de harina because they have a chemical smell when heated )

Love your show and i love mexican food too ! What is the advantage of using dried chilis ? They sell all those chilis in powder form too on amazon or at my local supermarket . Is the taste different ?

Thank you!!! I grew up in El Paso, so naturally I LOVE every one of your recipes. As a kid we would go to Deming, NM and pick our own red and green chile. When we got home we would roast the green chile on the grill and make sauce from the fresh red chile. Fresh Red chile sauce is my favorite. In my opinion better than sauce made from dried red chile…..That’s how Mom made it. All New Mexico chile is so awesomely good anyway. God Bless you and your family!

Philadelphia has a jalapeño cream cheese that is pretty good, and this seems like some jalapeño jelly on the side or heated and drizzled over top would work well also

I also make my green chile chicken enchiladas with the Cream of mushroom and Cream of chicken soups and Hatch green chile's I add garlic powder, onion powder, cumin, and pepper to my sauce. I also add chicken broth, milk, and some water. Did you add any spices to your sauce? I am also from New Mexico.
U did not wash the chicken before boiling
