CHICO'S TACOS AT HOME: How to Make El Paso's Iconic Tex-Mex Classic/Chico's Tacos Copycat Recipe

This recipe for how to make Chico's Tacos at Home is not for everyone. It's only for the people who "get it." Because Chico's Tacos is an El Paso institution. They've been serving up crispy rolled tacos drowned in a pool of runny tomato broth and topped with a mountain of cheese and a green salsa since 1953. Anyone who's ever spent time in this borderland city know's Chico's Tacos. And it's a privilege for me to share this copycat recipe with you so you can enjoy them at home.
Chico's Tacos
For the Tomato broth:
4-5 large tomatoes
1 8oz. can tomato sauce
1/4 large white onion
4 cups chicken broth
2 garlic cloves, minced
salt & pepper to taste (approx. 1/2 tsp each)
1/2 tsp ground cumin
Fill large saucepan with water and place on stovetop over medium high heat. Drop in whole tomatoes and let come to boil. Continue to let them cook until the skins crack. (approx. 20 mins.) Remove tomatoes from water, reserving half a cup of water for later, and place tomatoes in food processor or blender. Add tomato sauce to blender, as well as onion, garlic and seasonings. Pour in half a cup of reserved water and pureé until well blended. Drizzle olive oil in bottom of large saucepan and place of burner over medium high heat. Once hot, add in tomato pureé. Bring to boil then add in chicken broth. Stir well and continue cooking another 10 minutes. Remove from burner and cover with a lid so that it stays warm until ready to use.
For the Tacos:
1 lb. ground beef
1/4 cup finely chopped onion
salt to taste
corn tortillas
oil for frying
finely shredded cheddar cheese
In large skillet with a little oil, fry ground beef and onion. Once meat is browned, add seasoning. Mix well and set aside.
Heat corn tortillas on a comal or skillet. This will make them more pliable and ensure that they don't crack while rolling. Then place a little of the cooked meat on the individual tortillas and carefully drop them in oil with the seam side to the bottom and let them fry until crispy one one side before flipping them over to fry on the other side. Remove from oil and place on paper towels to allow excess oil to drain.
Serve while hot by placing rolled tacos into a bowl. Pour plenty of the tomato broth on top. Sprinkle with shredded cheese, and top with your favorite green salsa.
Here's my recipe for Roasted Tomatillo Salsa:
5-6 tomatillos, husks removed and rinsed clean
1/3 large white onion
1-2 jalapeños, stems removed, split down the middle
1 serrano pepper, stem removed, split down the middle
1 cloves garlic
small bunch of cilantro
juice of 1 lime
salt & cumin to taste
1/4 cup water
Heat comal on stovetop and place tomatillos on top. Let them roast on all sides until left with char marks. Do the same with onion, garlic, jalapeños and serrano pepper. (I leave the seeds in for added heat, but if you prefer a more mild salsa, remove the seeds.) Place the roasted tomatillos, as well as the peppers, onion, and garlic into a blender or food processor. Add in 1/4 cup of water, salt and cumin. Squeeze in some fresh lime juice, and pureé until smooth.

    Hi Marcy! My husband and I enjoyed the Chico's Tacos recipe. We had quite a bit of tomato sauce left over, so the next night for dinner we turned it into soup. We added a bit more broth, added the leftover hamburger meat, we fried some corn tortilla strips and added them on top of the soup, and then topped with the cheese. All the same great flavors, just in a different form. It was really delicious! Thank you again for sharing with us!

    What a great idea! I'm going to pin your comment because I want to make sure other people read it. We had quite a bit left over, as well, so I ended up making chilaquiles the next two mornings for breakfast. I fried pieces of corn tortilla, added some of the ground beef, and mixed in tomato broth and the tomatillo salsa along with some grated cheese. Then I fried an egg and put it on top. It was delicious. Like you said, all the same flavors, just in a different form. Thanks so much for the comment.

    Hi Marcy. I currently live in El Paso and my brother in law also makes a copycat version. He uses already made rolled tacos that we can get at a restaurant here called La Tapatia or, they sell them at our local Albertsons. He fries them up and adds the sauce and cheese. So much easier. Thanks for recognizing this El Paso icon.

    I worked there for a few months. I ate a double with fries everyday for lunch and it never got old. I would see the same people going there to eat for lunch everyday it seemed. A classic from the old school.

    Hi Marcy, First of all I really enjoy your channel. I was born in El Paso and lived on Alameda Ave just down the street from what I thinks is the original Chico;s Tacos from back in the 60"s. I ate there many time as a young boy. I now live in upstate NY, I like trying some of your recipes.     I used to eat at Chico's on high school dates in ElPaso in the 70's.❤ I like your recipe! Thank You. When I do go to ElPaso I get several orders and have the sauce on the side. I freeze the tacos separately from the sauce. I always have a yummy treat that reminds me of my youth.❤❤

    I used to live in El Paso and Albuquerque. It's been 45 yrs since I lived in El Paso, and to this day, I still crave Chico's Tacos!! I'll be going back to visit Albuquerque next year, and I plan on going to El Paso just to visit Chico's!! I seen one of your videos where you're in Hatch, NM and I couldn't get over how big it looks! Was there in 1978, or 1979 and it was a one street town! Thank you for your videos. I'm trying my hand at learning how to cook Mexican food. The only thing I've mastered is Chile Rellenos. ...... watching these videos is making me hungry! 😂

    If you've mastered chile rellenos, then you can make anything. Those are a bit tricky and take practice. You'll find all my other recipes to be easy. Also, you'd be surprised how many people who follow my recipes used to live in the El Paso, Las Cruces, or Albuquerque. They move away and then miss the food. There's something very special about it, and most likely it's the chile.

    I sold these outta my food truck in las cruces. I skipped the whole tomatoes and made a tomatoe broth. I also would light fry the tortillas to make them easier to roll and make them thinner. They sold well. I also sold a burger time style tacos with the cheese dip and hatch chile. Those sold very well

    Thank you so much for your recipe. I season the meat (onion powder, garlic powder, etc) and roll the tacos with raw meat and deep fry. I also use toothpicks. I find it much easier.

    As someone that has access to some of the best authentic Mexican (living in San Diego) food I must admit I find the super soupy liquid way too thin. The thing I love about rolled tacos is that crispy outside smothered with cheese, lettuce, guac, salsa, and taco shop red sauce. Great stuff. It is interesting to see this variation however.     We used to dip our fries in the sauce and tomatillo! When The Exorcist came out, we went to the drive in to watch, and so many people yelled Chicos!! at a certain point in the movie, lol!!     Hello Marcy yes back in my very younger years I have family that lived in Ysleta El Paso & when we use to visit my aunt there was a Chico's tacos in the area there and wow those tacos are very tasty , one time before I even saw your better how to video (which I am going to try it) I tried making them and they were did not come out good at all it was the sauce, so thank you for sharing.

    I'm very familiar with Ysleta. How cool that you made your own version of Chico's Tacos too. I was really happy with the way the sauce turned out. I probably should have pureéd it even longer so it would be smoother, but the taste was definitely right.

    This restaurant caused so much confusion when I first moved to ABQ from northern NM. I would talk about eating beans with chicos (dried corn kernels) and *everrrrybody* thought I was talking about the restaurant. At the time, I'd never heard of the restaurant, so it was confusion all around. 😆

    I lived in El Paso for 11 years and we ate at Chico’s Tacos a lot. We loved them! I’m definitely going to make them. Thx for sharing all your recipes as I enjoy them. Living in Nebraska now, we grow Anaheim chiles every summer and then roast, chop, and freeze them so I can cook with them all winter. We used to eat at Chopes a lot too, and I’ve tried to make Chile rellenos but they don’t turn out very well. Maybe you could eat at Lucy’s on Mesa and eat their tacos Antonio and then share that recipe! I used to love them as well. My husband liked the machaca there. Maybe teach us how to make that too!

By now, I'm sure you're aware Chope's is in my hometown of La Mesa. I don't think anyone would know where that is if it weren't for Chope's. Lol I will definitely be visiting Lucy's next time I'm in El Paso, and I'll be sure to order the tacos Antonia. I just looked them up online and saw a photo of those tacos. They look SO good with the cabbage and avocado! I may need to eat there a few times "for research."

    This looks very familiar....when I lived in Dallas I think I had something like this. That was over 50 years ago....geez Louise...I am getting old! LOL Coming from Kansas I had never had this type of food. I had my first nachos in Dallas...the bar owner could not believe I'd never had them before.

    Love Chicos Tacos. I didn't like them my first time trying, but after my second try the tomato stew and cheese all the sudden made sense and I was hooked.     Oh I love me some Chicos! Haven’t had them since 2017. We were hosting family from out of town and they enjoyed them too. They don’t like to waste food and I remember giggling when they drank the “soup” that was left in the container. 😅

    I think all those years I lived in El Paso I ate Chico's 3 times! It was definitly of of those places you had to grow up on, at least for me! I did like the fries though! Great job on the re-creation though!

    I am from El Paso. Every time I go home to visit I must go to Chicho’s Tacos. I get the sauce on the side and freeze it to bring back to California with me. I’m going to have to try your recipe. Anyone reading this, if you ever go to El Paso, Texas, I highly recommend you try Chicho’s Tacos rolled tacos and their burritos are good too.

    I'm just starting watching the video, and they look delicious. I've never seen tacos ahogados, great idea! You've got to come to San Diego and try the rolled tacos with guac, from the taco shops like Roberto's. I bet they taste similar, just with guacamole. We just put the red sauce on them, or dunk them. I like this idea of drowning the taco in red sauce. Now I'm craving it! Ah, they use shredded beef here.

    You had me at rolled tacos with guac, but then sealed the deal with shredded beef. I will definitely check out Roberto's next time I'm in San Diego. I haven't been in a couple of years, but it's one of my favorite cities to visit.

    We always hit up Chico's tacos before we went to Juarez and partied the night away. 😂 Shout out to the Tequila Derby. $5 Entry and Tequila Sunrises all night and hitting the dance floor.

    I grew up in Las Cruces, and went to El Paso a lot. I don't know how I missed Chico's, but I probably thought those Texans wouldn't know how to make proper Mexican food, silly me.     I grew up in La Mesa, just south of you. We, too, would go to El Paso all the time because I had an aunt who lived there. But it wasn't until I lived and worked there myself that I tried Chico's Tacos. It's more of a fast food that's fun and affordable. But as far as really good Mexican food, El Paso has a lot of great places to eat. I used to LOVE Forti's, though I haven't been in a while. El Paso also has some of the best pan dulce on the planet. Bowie Bakery was my favorite. 🤤 I'm so happy you found my channel. Thanks for watching!

    I spent most of my life in Las Cruces, so I had heard people rave about Chico’s Tacos. I finally tried them with a friend when I was about 45 yrs old. They were okay but I just didn’t get the hype. I do think though, it’s probably something that grows on you and I could see myself liking them if I ate them more often 😊 I’ll try your recipe and see what my husband thinks, he’s from New Mexico also, but don’t think he’s ever had them.

    I think you forgot to add half a jalapeno, seeded & deveined in the water with the tomatoes. Worked at Chico's throughout my jr & sr years in high school-- the Dyer location 👍

    Ain't nothing like the real thing. I live in NYC now, no good Mexican food here anywhere. I would have to fly back into my hometown to enjoy real Chico's Tacos and the rest of the super delicious Mexican food in El Paso.😢

    I used to love Chicos tacos, but what happened. They changed up what they were cooked in and now I wouldn't cross the street to get them anymore whereas before I would drive 50 miles to get them with my kids.

    Question: does the restaurant make a mild and spicy tomato broth ? In the video you said it was a tomato chilie broth - but you don't have any chilies in the recipe (i thought there might be some dried red guallio or new mex in it). Looks great by the way.

    Sorry, I should have been more clear on that. Chicos always comes with a green salsa that you add in. The tomatillo salsa is made with jalapeños and serrano peppers.

    Leighmugford, the original recipe does have jalapeno seeded & deveined. It's steamed with the tomatoes. It's just slightly picante for the little kids palate

    @@Michelle38760 No idea. I can only assume it was a vendor for larger operations. I have noticed a few copy cat type of locations popping up. There's a taco place in Austin which serve tacos that look just like Chicos.

    Do yours taste like theirs? You didn't say. Would you make any changes? I'm on the opposite side of Texas by the La. Border, so it's not like I can just drop in to Chico's. I am quite honestly amazed that there aren't more Spices!

    I think they came out pretty close. If I was making them for myself, not trying to match Chico's, I would probably add some form of chile to the tomato broth, and not just add green salsa in the end. Substituting the 1 can of tomato sauce for a can of El Pato would be fantastic. But they were really good.

    In all my travels, trying hundreds of local favorites, I have never been more disappointed with an iconic food offering. Fortunately for me, because I stopped at one and a half "rolled tacos", I didn't have to later endure those distinctive "Chico's farts" I also heard so much about.
