Pizzeria Concettina ai Tre Santi, a place to be for anyone who wants to try an experience that simultaneously combines the traditional side of pizza and the gastronomic approach in the making of the dishes and the tasting experience.
🍕pizza dough of Concettina ai Tre Santi
1 liter of water
40 g salt
1450 g flour
7 g natural beer yeast
After kneading the dough let it rest for 24 hours at room temperature, then divided it into 250g portions and stored them in the refrigerator.

I just found this channel today. The lighting, music, and editing are way beyond most KZread fare. The evolution of this multi-generation eatery is fascinating. I love how they multipurpose their simple dough boxes. I am a total pizza nerd so there was a lot to unpack in this brilliant pizzeria. Can anyone tell me the temperature of the dough room?

Da ragazzo abitavo a Gradini San Nicandro a due passi dalla pizzeria da Concettina. Nonostante che negli anni sessanta la vita era molto sacrificata, almeno una volta al mese il mio papà mi mandava a fare le pizze per tutta la famiglia, cinque margherite che il pizzaiolo piegava a metà e poi le avvolgeva con della carta bianca che tagliava a misura da un rotolo. Sotto il pacco ci metteva qualche pagina di giornale vecchio ma nonostante tutto, quelle poche decine di metri che mi separavano da casa erano per me una vera tortura perché quel cartoccio così profumato era molto bollente. A quei tempi era accettabile avere le pizze avvolte in carta che si usava presumibilmente da mettere come preparazione del muro per la carta da parati, ma oggi è inaccettabile vedere un pizzaiolo che prepara i panetti con l’anello al dito. Evidentemente è stata una distrazione una tantum che comunque poteva essere evitata.😢

Does using a machine to mix your dough put more air in to the dough as compared to hand mixing ??

I asked myself the same question. My guess is 16-18 Celsius. would love to know the exact temp. They also had a tmp-controlled vault in the main kitchen for the dough balls. The dough is 90 % of what makes a great pizza. The ingredients get way too much credit.

Pizza doce, pizza com borda recheada, pizzas exageradas no recheio existem desde sempre na Itália. Vocês tem muitos "influenciadores" que passam falsas informações sobre a nossa comida. 😂
