Estanboli Polo (Persian Tomato with Potato Rice) - Cooking with Yousef

Hi friends, today we make a simple, delicious dish called Estanboli Polo (استانبولی پلو) sometimes spelled Istanboli or Estamboli, which is Persian Tomato Rice with Potatoes.
I generally make this dish without meat like in this episode, but you can add meat as well, & I'll show you when to do that. Enjoy!
Ingredients List:
- 2 cups of Rice
- 2 Potatoes
- 1 Onion
- 5 Tomatoes
- 1 1/2 Tomato Paste
- 1 1/2 Teaspoon Salt
- 1 Teaspoon Turmeric
- 1 Teaspoon Black Pepper
- 1/4 Teaspoon Cayenne pepper (use less if you want it less spicy, we like spicy at the house)
- Cooking Oil
- Liquid Saffron (optional)
- Butter (optional)

    in our house we eat this rice with torshi and hot sauce (the liquid kind) and a bit of lemon squeezed on top ☺️

    Thanks for the video Yousef! The name might come from the indian translation of pilaf which is pulao, but who knows :)

    If the name is borrowed from a language it's probably the other way round, because there are a ton of words in Hindi (Mix of Hindi and Urdu normally spoken in India) language that have its roots in Persian. Just goes to show the closeness of our cultures.

    I never seem to have a successful cook of this dish- the rice is always sticky and gluey. Maybe I didn’t wash all the starch from the rice, next time I will pay more attention to doing it for longer. Thank you for another delicious recipe ❤

    Hi Cooking With Yousef, Can you show how to pickle the onion, garlic, vegetable and how you made that yogurt?. When I try to make yogurt it is not a bit of a sour taste just a regular taste, also, sometimes the yogurt doesn't become smooth it comes out to be similar to cottage cheese chunks.

    Is the rice partially cooked before you add it to the rest of the ingredients?
