Episode 1106: Love of Live Fire Cooking, Rick Bayless "Mexico One Plate at a Time"
In Yucatán, cooking over fire is a way of life. Rick meets up with Chef Juan Pablo Loza, who ignites the wood-fire grill for octopus with local pineapple. At Zama Beach Club in Isla Mujeres, Cancun Chef Federico Lopez fires up his seaside grill to make tikin xic, a Yucatecan grilled fish dish smothered with achiote, the region’s hallmark spice paste. And Chef Eric Werner shows off his all wood-fire kitchen at Hartwood in Tulum. Forever obsessed with cooking over fire, Rick brings us to Lena Brava, his new all wood-fire restaurant in Chicago, to make poc chuc, a traditional citrusy grilled spicy pork dish, then to his backyard for spatchcocked chicken al oregano worthy of a summertime fiesta.

Thank you Rick Bayless for being an exceptional ambassador to the world for Mexican cuisine with all it’s amazing depth, complexity, history- you are a passionate food anthropologist.
I wish Rick would do an episode all in Spanish. Just put subtitles. People will still watch.
Mexican cuisine is next level
I don't know why you dont have more subscribers! I love your cooking, it's not complex and the dishes are great. I use a lot of your ideas in my own kitchen.
There's something so comforting about grilled food. The flavor seem more intense. Thank you!

Excellent fire cooking video, thanks!
Great timing! I just got a free fire pit, and a new grate, and it's getting the maiden voyage tonight. Thanks for your knowledge, enthusiasm, and sharing. I'm all fired-up (pun intended).
An all woodfire kitchen. Never thought about that concept, but it really really is beautiful. I have a new one on the bucket list, thanks.
Woof woof from NorCal. Great food for great mouths... or is it the great wines that just make great food taste even better. But all thumbs up here from this dog
