I’ve been trying to make tsourekia now for around 40yrs using Greek cookbooks and following Greek cooks on KZread and the tsourekia never ever worked for me they came out like bricks. Followed your recipe and my tsourekia came out perfectly. My family loves them. Thank you for your easy to follow recipes. You’re a god send. Love your videos they’re very informative and funny. Keep up the good work. Καλή Ανάσταση. Cheers.

Such a great video, clear and easy to follow. Did you put both pans in the oven together, like one above the other and if so did you swap the pans halfway?

  • @nikolopaa

Thanks heaps Adaris! I did put them both in together one ontop of the other. Sometimes I do switch them around and sometimes I don’t. But I always open up a few times when I can see the colour forming and at that point if I think it needs a rotation I will :) I think it just depends on the oven also. Hope this helps!

Niko don’t worry I’m making them now I didn’t realise it may take a few hours to rise I remember mum would get so upset waiting 😮 So I’m going to stay cool and try to be at peace 😅 While I wait … Καλή ανάσταση I’ll let you know how they turn out Btw I googled the flour you use and went to local Woolworths They had run out of boxes (maybe too many ppl making your recipe and using your tips) So …. I walked away disheartened Then I went back to try find a similar one And a few shelves down there was 1 box of yours and the other one I got is an Italian one - (brand Molino) for bread pizza etc I thought, “thank you God” for the 1 last packet Niko uses And finding something similar (using the rest of the half kilo) I have never made tsourekia before Took 3 days off work to do those things my beloved mum always does Thank you again I love your recipe and praying 🙏🏼 they turn out similar Ps - going to use Bessemer pans to cook them - they look similar in depth and length to yours I read the measurements on the recipe 😊

Yes we had a great Pascha And my tsourekia were to die for in taste however they aren’t that fluffy. What do you suggest Niko ? Maybe coz I only used a kilo of that flour and 1/2 kilo of that Italian one ??? Yep they all went and bought the flour you suggested 😂 I wished I could send you pics I want to try make them again in June on our school holidays I’m a teacher in primary school Any tips will be so appreciated They are very yum though Took ages to rise Then the processes of rising The balls to rise The πλάσιμο of Tsourekia to rise The house was a φούρνο Winter and in singlets 😅 I don’t know how our mum’s make 3 times the batches in one hit My lower back was wrecked after the 6 Absolute άχρηστη But I was so rapt to try ❤ thanks 🙏🏼

Hey Alice :) Thanks for the comment! I am not to sure, it could be a range of different things. Just double checking that you were using a similar bread flour ? Did you allow it to rise to double ? Its hard to pinpoint exactly but really happy that you managed to get some that you were happy with! Hope you had a great easter 🙏❤️
