Greek sweet Bread,Tsoureki.The most flavourful recipe you will ever try
This tsoureki recipe is very soft ,fluffy with rich flavour of mastic, mahleb and cardamom, the three aromatic spices.Enjoy!!!
Ingredients:
Sugar-mastic mixture
-50 gr sugar
-3 gr mastic
Mixture A
-80 gr extra strong bread flour
-50 gr sugar
-24 gr yeast
-40 gr luke warm milk
Set aside for 45 min
Mixture B
-5 eggs
-100 gr sugar
-200 gr milk
-190 gr butter
-8 gr mahleb(mahlepi)
-sugar-mastic mixture
-2 gr cardamom
-20 gr olive oil
- a pinch of salt
Put in very low heat just for the butter to melt
Add Mixture B into Mixture A and whisk until combined
- Add 1 kg extra strong Bread flour gradually and knead until it become a soft dough.
DO NOT USE extra flour if the dough is sticky.
Use olive oil
Set aside for 45 min and allow the dough to rest and double it's size.
Create dough 'ropes'.
You can fill them with 100 gr dark chocolate and 100 gr white chocolate or leave them as they are.
Once you prepare them set aside and let them rest for 20 min. Bake them in 170 c,in fan for 25-30 min depending on how big the tsoureki is.
