Easy Meal Ideas for Weekend: 4 Delicious Recipes TRY TODAY | Kisir, Potato Salad, Fava, Dry Kofte
Ойын-сауық
Today I would like to give you 4 different recipes that we have prepared for ourselves when we were outside for our annual plan with the team. They are very easy to do, delicious, healty and vegan except KURU KÖFTE. You can prepare this meal for a picnic or any other small gatherings with family and friends. The good thing to know about these four dishes is that even if they are not eaten on the same day they are cooked, they are still tasty for a week or so. The first recipe is everyone’s favourite, POTATO SALAD with a Refika touch, which is made with red cabbage and mustard sauce. The second recipe is a delicious meze, FAVA, which is made of fava beans (broad beans) and looks like a pudding. It is the true rival of an avocado beacuse of the feeling of its texture when you’re eating. The third recipe is KISIR, which is made of bulgur and pomegranate. It is an innocent carbonhydrate because of low glysemic index, which means it doesn’t let your blood sugar level fluctuate. The last and only non-vegan one is KURU KÖFTE, which can be served hot or cold so you can store it in the refrigrator and eat whenever you want. You can find details of these recipes in the video.
It has always been a great pleasure sharing what we have here and a beautiful way for us to heal. I want to thank all of you guys again for supporting our fund for victims of the earthquake disaster, where we have raised more than $65K. We hope everything is going to go better each day… Lots of love! ❤️
Detailed recipes are in the comments section.

4 Delicious Recipes to Go •Potato Salad with Red Cabbage 6 small potatoes ½ cup water 100 ml Olive oil, 2 tablespoons whole grain mustard 1 teaspoon salt 1 teaspoon sweet cayenne pepper 1 teaspoon red flake paper 1 teaspoon black pepper 6 sprigs of spring onions, chopped 1/3 medium red cabbage, sliced • Cut potatoes in big chunks. If you have a pressure cooker place them in with cold water and a pinch of salt. Close the lid and let them boil for 10 minutes until fork tender (If you don’t have a pressure cooker you can use a regular pot.). • While potatoes are cooking, prepare greens. Start with spring onions, the white part should be chopped thinner, the green parts could be thicker. If you’ll eat this salad on the same day you prepared rub red cabbage with some salt, but if you’ll eat it for more than one or two days you can skip rubbing step. • For dressing, in a large bowl, mix olive oil, mustard, salt black pepper, cayenne pepper and red pepper flakes. • When the potatoes are done, take the first heat off and then mix them with the sauce while they are still hot so potatoes can soak the sauce better. • Add the purple cabbage and the greens. Give it one last mix and it’s ready to serve. It is delicious by itself, but you can enjoy it as a side dish with schnitzel or köfte etc.. •Fava Dried broad beans; 500 gr Onions; 2 small, cut in half lengthways Olive oil 1/3 cups-80 ml Salt; 1-heaped teaspoon Sugar; 1 teaspoon Drinking water; 1.4 litres To garnish Dill; 4 sprigs, finely chopped Crispy onion- if you have at home Fresh olive oil • Place broad beans, onions, salt and water in the pressure cooker. • Close the lid and cook until the pressure gets high for 10 minutes. If you don’t have a pressure cooker, the water you pour in the pot should be 3 fingers above the beans. You’ll need to cook them for about 30-35 minutes until they soften. • Then add olive oil and sugar. Use a hand blender to make it silky smooth. • Get a big tray or anything that you want your fava to take the shape of, put some olive oil and pour the mixture. • First, allow it to cool at room temperature. Once cool, refrigerate for at least 2-3 hours. Now it’s ready to turn! • Put some olive oil, crunchy onions and dill on top and serve. •Kısır with Pomegranate Fine bulghur, 2 cups Pomegranate juice, 160 ml Pepper puree, 1 tablespoon Tomato puree, 1 tablespoon Olive oil , 10 tablespoons 1 tablespoon pomegranate molasses/sour Black pepper, 1 teaspoon Salt, 2 teaspoons Cumin, 1 teaspoon Spring onions, 8 springs chopped Fresh mint, ½ bunch chopped Parsley, 1 bunch chopped Pomegranate seeds, 3 handfuls • Put fine bulgur, warm water and salt in a bowl, close a lid until the bulgur grows bigger. • Pour pomegranate water into bulghur. • In another bowl mix tomato paste, pepper paste, olive oil, pomegranate molasses, salt, black pepper and cumin. • Put the sauce into the bulghur and knead. • Add chopped greens, pomegranate seeds into the sauced bulghur and mix them very well. Serving tip: You can wrap the kısır with lettuce leaves or you can carve the pomegranate and use it as a plate. •Kuru Köfte, Dry Meatballs For meatballs; Ground beef, 500 g Onion, 1 grated Garlic, 2 cloves grated Cumin, 1 heaping teaspoon Black pepper, 1 teaspoon 1 egg Meatball spice mixture, 2 teaspoons, etsy.me/3yzrdjC Bread, 3 slices or 3 tablespoons breadcrumbs Salt, 1 teaspoon Parsley, ½ bunch For sauce; Yoghurt, 8 tablespoons Tahini, 3 tablespoons Lemon juice, 4-5 drops Black pepper Salt • Put onion and garlic cloves into the ground beef and knead so well. • Take out a half of the bread, put it in a food processor, add some water and run it until it crumbles, then add it to the ground meat. • Add cumin, meatball spice mixture, black pepper, egg and salt to the ground beef and knead more. • Finely chop parsley. After the spices you add on the minced meat are mixed well, you can add the parsley into it. • After thoroughly kneading, fry the meatballs that you have formed into long finger shapes by putting sunflower oil in a wide and deep pan. • For sauce, mix all ingredients in a bowl.

what i love about this channel is how turkish food from various regions is explored here, especially for a foreigner like me who's fond of turkish food but is exposed to only standard dishes offered at restaurants

Thank you so much❤️
Once again, fabulous recipes. I love something crunchy in potato salad but had never thought of red cabbage. Yum.
Oh Refika!!!! Thank you!!!! This is perfect. My mom who is 88 has gotten bored with eating. She is limited with what she can eat because of health issues/medications. She likes potato salad & yours is so colorful & vibrant!!!! You can see the energy and healthiness of it, if that makes sense…I’m going to pick up the ingredients & make this to take to her tomorrow!!!! And the Kisir??? NOW I know what I am going to make with that box of bulgur in my pantry!!! The Kuru kofta YUM!!! I’m so making that too!!!! It would be good for mom to have as little quick bites for lunch, snack or dinner during the week (and me too!) I LOVE kofte & this is SO easy!!! This whole video might just be our Easter meal! And you reminded me I need to pick up pomegranate molasses 😊.

@@Refika Hi........Please demonstrate more Vegan food recipes .Thanks .🇩🇪
You are The Queen 👸of Bulgur! I love it. 🌷
I had already planned to make kisir today. Kisir is one of the MANY dishes that Refika and the team have taught me to make that I make on a regular basis. I had forgotten about fava. But this video reminded me that I had purchased dried fava beans for the purpose of making this dish. I had decided to make the fava after watching Refika make it in a video about meza a couple of years ago. Looks like I am making kisir today and fava tomorrow. 😀 Lunch will be ready for work week ❤❤❤
Im from the Caribbean I fell in love with your channel and Turkish cuisine My prayers go out to you and your country 💗💗💗💗💗💗💗💗💗💗💗💗💗
👍 Great 💞
Thank you Refika and Team!! Sounds like you had a great time on your gathering earlier in the year. I would have loved to see more photos with all of you from that experience ❤
Thank you Refika for the recipes, I got myself some bulgur because I'm dying to try Kisir. Best wishes for your beautiful country❤
Dear Rafika, I really love watching your videos. You have such an approachable personality and that translates so much on your food. Today I attempted to make a few of your dishes and it was so much easer than I thought. I made the beef stew with figs 👍👍👍👍👍👍. I made the eggplant with the yogurt sauce with Nigella seeds. And the iskir with sweet potato’s and leek. All 👍👍👍👍👍👍👍👍. Thank you and your team for the great work and beautiful dishes. God bless you and the victims of the earthquake. May he give strength to the families that have suffered. Much love. 🌻🌻🌻🌻🌻🌻🌹🌹🌹🌹🌹🌹🌷🌷🌷🌷🇵🇰
Wonderful recipes, Thank you for sharing. You're an excellent teacher. My prayers for Turkiye. May God restore.
Four great plates of food there. The fava is probably my favourite, great texture & flavour. I usually like either some cumin seeds or powder through mine, or drizzling a cumin flavoured oil over it. I love beans & pulses & the fava gives me a different way & texture of eating them plus it's so easy to make. The beton is worth making too, really satisfying on a cold miserable day. Especially if you've been out in the rain or snow, a bowl of it makes you warm & happy again.

Dear Rafika thank you for all your lovely recipes 🙏🙏🙏👏👏👏sen süpersin
I have to pause the video at fava to tell you this: if I can make something to substitute for avocado, I will be SO happy! I love avocados but they are quite expensive here and when I do treat myself and buy one, it often turns out to be bad and must be thrown away. So THANK YOU for the hope that fava will be a substitute!! Now back to your video :)

Wasn’t sure wether to comment or not but doing it anyway now :-) I do like meat but i’ve never had problems with vegan products so i’ve been doing some tests and my conclusion right now is that the only thing that matters is taste/experience. Many of the vegan items i tried tasted good and felt good while chewing so i have no problem at all using those to replace meat based products.

Fava >> avocados. Never understood the appeal of avocados to be honest
@zaria5785
Жыл бұрын
To me they are in totally different categories. But fava is also delicious in its own right. There’s the random avocado in the store that’s the size of the palm of your hand and then there’s the avocado that takes the title of King. They are large and creamy and is used for everything from salad dressing, to smoothies, to salsa to a spread on a sandwich bread instead of mayonnaise. You can add it to baby food, and chocolate avocado pudding is fabulous - mousse-like texture. Hope you can give these a try.
It is hard to express how much we love you!
