Easy Indian Dishes with Host Mom | COVID Cooking Lessons
What is it like to spend COVID with a family on Airbnb? My host mom Jaya teaches me Mangalore cooking lessons each day in her Bangalore home. Now, on day 58 of the lockdown, I am ready to share a few of those recipes:

I'm no chef so take these recipes loosely. Leave comments for corrections and your tips.
1. Chana Masala
Cook 1 cup of chickpeas in a pressure cooker for 15 minutes
i) soak beans overnight
ii) drain beans, add to cooker
iii) cover chickpeas with water
iv) 1 whistle. simmer for 15 minutes.
While the chickpeas are cooking, sauté the aromatics in oil:
v) mixed chopped onion with garlic-ginger paste
vi) add grated tomatoes
add spices:
vii) red chili, coriander, garam masala
Drain the chickpeas. Toss the chickpeas with the aromatics.
Optional: add a big ol' dollop of cream. (don't get the reference? Google "Do a dollop")

2. Shredded cabbage (my favorite)
Heat coconut oil in a pan:
i) add cumin seeds
ii) add big spoon of chana dal (yellow lentils) + black gram dal (white lentil)
iii) add onion and garlic
iv) add curry leaf
Add in shredded cabbage (1/2 a head for 2-3 people)
v) add a pinch of turmeric
vi) half cup of water to steam
vii) close lid, simmer for 10-15 minutes

3. Dal aka lentils aka Delicious Affordable Lunch
In the pressure cooker:
i) 3 chopped tomatoes, 1 cup of dal, water to cover, 1/2" ginger, 2-3 green chili
ii) 1 whistle and then simmer 10-15 minutes
Heat oil in a pan:
ii) 10-12 smashed garlic cloves, cumin seeds, chopped onion
iii) add curry leaf and turmeric
Add the cooked dal with the aromatics. Serve over rice. Enjoy with cabbage.

4. Tomato Rasam aka tomato soup
i) boil 3-4 tomatoes, 1/2" garlic, 3 green chilis
ii) let cool. then mix in blender
Heat oil in a pan,
iii) add smashed garlic, chopped onion, cumin seed, and curry leaf
Add spices,
iv) cumin, turmeric, red chili
Add the blended tomato purée to the aromatics.
Add 1 cup of water to thin until desired consistency.

@sweet sanchi send me a photo or video of what your kitchen looks like! I also love how in Indian kitchens there is usually a giant stockpile of onions, garlic, and then the various lentils or chick peas. Americans tend to use canned goods instead of the raw (is that the right word?) food.
Hope this time in India becomes one of the best moments of your life

I love your India banglore series because everything is so calming and unfiltered. In our house we add more masala in sabzis but this was super yum too.

Dry fried cabbages and lentils are best combination with rice for any veg day cravings !! Some papad would have excited me more 😋lol, thank you hope she cooks more for you on your videos.
Hahah...I love love auntyyy ...she is easy breezy and soooo friendly... I loved the cooking, felt like watching my home kitchen ... I had not seen this kind of video for sharing/teaching cooking ever... like... you jz have a chat and put few clips of cooking in between made it look so easy...of the recipes explained , my fav is Dal , the cabbage one and rasam!!! Hope to see more ... I've been thinking of making some hummus (maybe with an Indian flare) soon cause there are too many chickpeas around not to be blended into my favorite dip.

Generally majority of indians are vegetarian, we occasionally eats non vegetarian food. I eat meat/mutton/chicken (not beef) only once a week.

Trying to get as much knowledge as possible. It's hard to explain how Americans truly do not use pressure cookers and here absolutely everyone has one in their kitchen.

Correct. Every house has one pressure cooker. Majority of India uses a fuel stove and pressure cooking saves both fuel and time.
I started cooking this lockdown, it smells good when onion is put in boiling oil.

I love the way indian households smell, wake up in the morning and the coconut oil always puts me in a good mood.

India food is the best!! Especially for anyone who is vegetarian. My stomach has truly never felt better. But yes, definitely love India.

Hey Erik, just for your reference since most Americans may not be familiar with a pressure cook, instant pot would do a similar job. I guess that makes the reference easier.

Ohhh im on a global campaign to teach about the pressure cooker. Instapots are so expensive compared to the simple cooker :) learning lots here

Nice recipe..one thing I don't like is the coconut oil it's not healthy at all.. however she was telling its very healthy 😂

Smelling coconut oil in the air makes my soul full. I'll be conducting a several month study on how healthy it is ;) However, my stomach has never felt so good and I have had years of issues.

coconut oilo is the healthiest oil and best for indian cuisine because of its high smoking point. People in north use mustard oil and in western zone its peanut oil whihc is suitable for their cuisine. Ghee is obviously the healthiest option but traditional ghee is very expensive.
You should get married to a beautiful Indian girl. 😜
