We continue the journey learning homemade south Indian dishes directly from Jaya's Kitchen. She feeds the family with simple, fast, and affordable meals that are DELICIOUS. A difference from America is that most Indian dishes are savory rather than sweet - I could add an avocado and Trader Joe's 'Everything but the bagel' spices to almost everything here.
Most dishes are altered to be more friendly towards people living with diabetes. These dishes are high in carbohydrates.
I. Millet Dosa (Indian pancakes or crepes):
Mix in a large bowl and leave to ferment overnight:
1 cup of black gram (mung bean)
3 cups of millet flour
4 cups of water

1-3 green chilis
Blend
Jaya's Chutney:
1/2 cup shredded coconut
Green chilies
Ginger
Coriander
Onion
Garlic
Blend
II. Jaya's Upma (savory couscous):
Dice and sauté:
Onion, green chili, ginger
Black gram, Mustard, Bay leaf
Coriander, Yellow lentils
Mix in 1 cup of rava / couscous
Sauté for 5 minutes
Pour 2 cups hot water
for 1 cup rava
III. Jaya's Poha (flattened rice)
Soak 1 cup of flattened rice for 10+ minutes
Dice and sauté:
Onion
Garlic
Ginger
Green chilis
Curry Leaf
Turmeric
Yellow dal
1/2 cup Shredded coconut
Soaked flatten rice

Making dosas,... headshaking. Wouldn't be surprised if your passport came back Indian. It's not fair you get Jaya as your personal chef. 💚 Proud of how far your stomach has come.

I am SO excited to return back to NYC and explore the Indian cooking scene. My aunt lives on the west coast where you will also find Indian grocery stories. She organizes her entire pantry by region of the world, which I never understood until staying here. 100% going to make my own masala spice kit.

Yes. Home cooked meals are incredible in taste and in health. I've had a lot of underlying issues (that may stem from diabetes) and many have gone away since my time here in India.

How to pour milk on a bowl of cereal ;) I've noticed Americans prepare yogurt a bit differently than you do in India. Often, my mom will make a bowl of greek yogurt with a bunch of berries and granola on top - which you can find but feels very 'westernized' here in Bangalore. My sister also has some incredible granola recipes but they require an oven which we do not have here. Else, I eat scrambled eggs many mornings.

Thank you thank you. You're always too sweet and kind. I cannot wait to come back to India to explore the north. Also, Jaya gave me a pressure cooker to bring home to the States so Indian cooking is 100% not going to stop.

Jaya makes me laugh with each video. It's been such a wonderful blessing to be with this family during the lockdown and so much going on in the world. I often do so much alone so having them all is amazing (plus the dogs). We'll keep making cooking videos as long as I am here.

My dad has diabetes, he loves upma/poha, but he substitutes the flattened rice with quinoa/oats.

Ooo i like that recommendation. You learn a lot about oats when diagnosed with diabetes - there is a large difference between quick cook (spikes your blood sugar insanely fast) verse steel cut / slow cooking (keeps you quite stable)
