    I spent several years honing my hot and sour soup recipe (i usually make it at least once a month). This recipe is pretty close to mine, and slightly more elaborate ... for example, I usually use some coarsely chopped mung bean sprouts (for crunch) if I dont have bamboo shoots or preserved veg (ex: baby corn) handy, and I usually like a little minced pork (for flavor and texture). From memory, your ingredients look pretty spot on, right down to the black vinegar (a must), snd the small touch of sugar to balance the salt, pepper and umami. However, the dish is all about balance, so I wont know for sure until I try it.

    Jeremy, Not sure how authentic it is but I first had this on HK island many years ago and they used lashings of cracked black pepper to give a different heat so when I make it at home that is how I do it. Like the videos. Mike (down under)

    I often make hot & sour soups. I add a quarter of a teaspoon of sesame oil to the eggs.

    Jeremy, in my travels I have come across 2 versions of the hot and sour soup (from the North and the other from the South) one that uses chilies for the spice and the other uses pepper. If I am honest I prefer the pepper version and I always make it more sour with extra vinegar. However, I will try your version and see how I get on.

    It's Labor Day today, I just made this Hot & Sour Soup put slice napa cabbage instead of bamboo shoots, a lot of ginger paste, tiny slices of ginger, dried chili pepper, left over rotisserie chicken, etc. did the rest as to his instruction...well it's yummy 😏 Thx for posting this vid.

    YEEHAAA -- what a great lookin job yu did -- looks like it was not your first time -- ahahaha -- and the finished soup looks like some I had about 25 years ago when a new place opened up here in N.C. USA - it was being looked over by a guy from china that could barely speak english -- he was very peculiar about the hot and sour soup they made there - always checking on their work -- after he left to go to other restaurants - I think that was his job - the soup went downhill to the point of boxed stuff being used -- with MSG being used in it of all things - it was not anything like his soup - I would drive about 40 miles one way just to get soup and crab Rangoons - way better than the dozens and dozens of restaurants I have visited -- made my mouth water before and while eating - my favorite food it became -- nothing better to this day - sure do miss that particular taste -- toe curling taste it was -- yours looks like his -- unlike others somewhat -- where is it that I may get the ingrediencies without MSG in it to use -- even if i have to order from your country -- any suggestions ? ! ? - funny how yu make it look so easy -- ahahahaha -- I have eaten it at every place I go -- not the same --

    There are loads of Chinese restaurants in Chinatown there, but there are also brilliant Chinese food stores there as well if you want to try any Chinese dishes... Take your recipe in and they will tell / show you what each one is....brilliant area....excellent restaurants and foods....

    White pepper in the website recipe but Jeremy seems to have forgotten it. I'd guess it probably best added when you take the soup off the heat

    Did I miss something? No sugar? Also, I was taught to add the vinegar at the end, so the sourness does not get cooked down. It looks very good though. Never tried it with that preserved vegetable, gotta try that.

    My fiance's Chinese living in China and he has told me that the Heat one gets from hot and sour soup is strictly black pepper. He is right because I have overused black pepper on a couple of occasions and couldn't eat the recipe it was so hot.

    I have never had hot and sour soup that contained meat. It did however contain some sort of meat to make the broth along with mushrooms and tofu and other vegetables but no meat. Somehow putting pieces of meat in a hot and sour soup seems wrong.

    @@SchoolofWok good I'm glad. My insulin receptors do not function and I cannot process protein of the meat or animal variety. I am the only one in the world with all of my symptoms and the disease has not been named yet but is it is a genetic disorder which has many illnesses and problems stemming from non-functioning insulin receptors. You never know who you're speaking to or why they say what they do. Elizabeth

    The only Hot And Sour soup I like is the store bought powdered ones from Knorr. (I know...blasphemy!). They have bits of dried chicken there and the texture is just right. Somehow fresh chicken meat just doesn't go with the taste of Hot and Sour soup.

    Many recipes and most restaurants I have had it in use pork, though I would say it's not at all important for the flavor and for texture the bamboo shoots and mushrooms are the key.

    @@TheDj4088 I live in Maine and the majority of hot and sour soups do not use meat. Which I am happy about because I get my mushrooms and my bamboo shoot I also get other vegetables and tofu. You just ask for hot and sour soup and that's how it comes. Have a great day! :-)

    dreyhawk : ground white pepper gives more heat than the black, you must try it. It’s the inside of black pepper corns, very different flavour. Use that and some black for amazing taste

    jeremy, please explain the pickeled veg in the packet. I need to order it, or find it at my asian grocer.. please help. I dont understand what you meant in the video. I need a name brand, or a place to order it. thanks in advance. .... Love your Hot and sour soup video, it has inspired me to make this as a staple in my home. We had great hot and sour soup at a local restaurant, but he moved away. we also have very mediocre and underwhelming hot and sour soup available. Hence . I will make it at home. After all, eating very well at home, is the new going out to eat.

    That fungus, here in the UK grows on alder, and is rather politically discorrectly known as Jew's Ear Fungus. It is pretty common and easily collected. It dries well too.

    Jeremy, video suggestion(s): Picking, preparing, cleaning, maintaining other kitchen tools besides the wok, ie your knives, cutting boards, other pans etc And I'd love to see one on basic knife/cleaver techniques *Thank you again for your vids. They are very entertaining and educational.

    This recipe looks good. BUT there are a lot of bad recipes for this soup. All are loaded with ingredients. Trying a new recipe can turn out to be a long, expensive, failed experiment. I've tried a lot of bad recipes before I found a good one. The important part of this soup is getting the broth right. Suggestions.... 1. before adding all the ingredients, try making just the broth. Don't waste all the extra ingredients till you are sure the broth is good. This is only common sense. eg...when trying a new recipe for sweet and sour shrimp... first do a test batch of the sauce. Shrimp is too expensive to add to an experimental sauce. 2. for heat in hot and sour soup, use white pepper ( a chinese chef taught me this). It's a nice clean heat without all the weird flavours that other hot ingredients often have. Weird hot sauces and pastes often kill the overall flavour of the soup. 3. shredded black mushrooms.... buy them in a bag dehydrated and pre shredded. Just throw in a handful. Soaking and cutting mushrooms is a big waste of time and you can never cut them as well as the bagged ones. Not many Chinese restaurants waste time cutting those tough, slippery mushrooms.

    I too have gone through many recipes to get this soup right and definitely agree with the white pepper. A good stock and chinkiang vinegar also important. Now after watching this I may have to try the preserved vegetable, I don't recall ever seeing it used in this soup.

    i found it at my local asian market. taste excellant, out of the package. not foil like yours, but a nice handful of real pickled full size mustard green. mmmYUM ! ! !thanks so much. Also, I must agree with gord johnson.. make the broth first, then ingredients. I found shredded Shroooms, I'm in . My next attempt should be right on. Thanks for posting and all the comments also.

    I hate wood ear! It's like you can never chew it all the way it's just rubber bands! I eat around it in my hot and sour soup or I swallow it whole if it's short enough.

    Most of the bottled ingredients are from Lee Kum Kee, i.e. soy sauce, sesame oil etc. Not too sure about the broad bean chilli paste and the preserved veg, however. - Lee

    it aint about price, its all about flavor, and enjoying a great soup. being nurtured.also I will leave out the meat. I am making my own broths, for cooking at home, so my hot sour soup will be the best it can be.

    I disagree that this is a simple-to-prepare soup. The prep takes a couple of hours. I don't care for egg strands in the soup. It's nicer with clear broth.

    I have had the thin, Hunan(?) style, but I have always preferred substantial hot & sour soups: it’s peasant food, nourishing, satisfying, and very healthy for hard-working people. Good for the soul, too.
