Followed the recipe to a "T" using my Hunsaker drum. The mop is truly outstanding. Would also be great on pork steak. Got my pork spares from HEB, seasoned with Diamond Crystal and 16 mesh black pepper with a light dust of garlic powder. Hung the ribs for two hours and then laid them on a grate and mopped them just like the video. As a Texas guy, these are my style of pork ribs and these turned out to be the best ever.

how often did you have to add more charcoal? And how much dio you add to maintain the temp. This is the part I always get stuck on. If you do another video, can you show this step?

Great video! I love spares and the way you cooked them. They don't need to cook for 6 hours to be fantastic. I also leave the membrane on, I believe it holds in moisture and if you wanna take it off it comes off way easier after cooked. Plus if you eat the membrane you get that little snap when you bite it, everyone likes that on hotdogs and sausage why not ribs. Keep up the great work my friend.

Hi. I built one of these, thanks to your video, to help learn welding and there doesn't seem to be much stuff like this in the UK. Im curious though about how you handle airflow? I noticed you had the door completely shut and the top vent almost closed, wouldn't that choke the coal out? Love to hear any advice on how to handle the airflow etc, thanks!

What’s your favorite to do, mop or spritz
Hey man, just thought of this while watching this video. Has to do with your charcoal chimney and this would be an awesome touch to the chimney. On two of the side at the very bottom, you should cut out a small radius that matches the radius of your firebox, that way it will sit really nice and “lock in” so to speak to the top of your firebox...make it a bit more stable. Anyways, stay FREAKY!
I tend to like the texture of direct heat a little more for ribs. Looks like a great trim job too.

What's your opinion on using the big Mediterranean sea salt. I ask cause I found a huge size at a Buisness Center Costco.
We’ve made these at my place and honestly the sauce is not even necessary.
I imagine after a long day of welding and avoiding the snake in your boot those ribs were amazing.
I would like to see your version of a beef neck. I'm sure it will be great like the rest of your chow.
