    I followed this method today on my WSM without the water bowl. The result was absolutely banging.

    I use only iberico pork ribs and a dry rub and hang them in my WSM without the lid with the coals banked on one side and the ribs hanging on the other. Cooks in like 2-3 hours every time and the taste is out of the park. No wrapping with a bunch of butter and sugar, no Smokey flavor just great grill style flavor. I won’t and don’t do them any other way now. Nice vid direct heat is def the way to go😎

    Not for their ribs unfortunately. Snows used to, but they’re cooked on their offset now.

    Great job! The mini Chud Box is my favorite cooker and it’s so versatile and easy to cook on and the direct heat flavor from the fat juices being infused back into the meat is just outstanding!

    Great looking rack! Grilling and mopping definitely brings out the true pork flavor, Ya gotta visit the south, Tennessee, Carolina, Georgia etc they have the pork game on point, find a spot cooking on an old oil tank they made into a grill, you're not gonna find better.     Did you top your charcoal up? I have a cheap Webber Style grill but I would struggle to keep the charcoal alive for more than an hour

    Use burned down wood coals, then you will really have something. Those ribs do look amazing.

    I did some pork steaks on my Weber Smokey Mountain in the direct heat style. They came out insanely good. I’ll have to try ribs since I don’t have a Chudbox… yet.

    Great looking ribs. I'm a fan of chargrilled flavor. Talking about Texas, Snow's does pork steaks on direct heat, and even ribs at times, as was shown on a video.

    NY style cook - heat oven hard to full heat, turn the flame totally off and cook for a few mins, then turn flame on again to colour top

    Nice! Going to try this mop sauce next time I make ribs on my Dumpster. Direct heat is my favorite way to cook ribs. The flavor is amazing. Do you cook with just coals? I start with a chimney of lump and add a small split and my pit runs at 300°-325°

    No just directly under the meat. Spread out fairly thin and wide
