This show has such late 00's feel. Where TV was still strong and just before the internet really started to take over the culture. My favourite thing about Jacque is he always tells his audience to cook, sit down and eat with their family. Very wholesome
I am today years old when I learned that instant potatoes are a good soup thickener/chowder shortcut.

JP is so relaxing. Even my old, curmudgean cat will sit in my lap & snooze while he in on. He gives confidence that you can do it.

Pretty much. He cooked for 2 french presidents and was at one time offered the job of chef at the White House.

@@smzig All true. Plus the Kings and Queens part! Those were usually as guests of the French Presidents, but not all. Our man Jack or Jacques definitely has been around in the top circles!
This is a chef I can't get enough of. Ive followed him in all his various shows. Simply amazing.

Just keep your phone inside a plastic bag so that when you drop it into the soup, a $5 dish doesn’t become a$200 dish...
Love this guy, makes everything so simple. Plus he is so calming reminds me of Bob Ross but of the cooking world.

I would agree in how soothing his voice was. But Bob Ross would have to be Michelangelo for Chef Pepin to be like Bob Ross! He's the best! (Substitute your favorite classical artist for Michelangelo if you prefer!).

Jacques is the only chef i like to watch. he does everything right before your eyes.
I remember watching Jacques Pepin and daughter Claudine cooking together on PBS. I even bought their cookbook. Yum!
I just tried watching a documentary on Ted Nugent and became so disenchanted and agitated that I immediately pulled up some Jacques Pepin. His videos are so soothing that it's like sinking into a warm bath. For a moment, all seems well with the world.

I'm not a fan of instant potatoes, but using them to thicken that soup was actually pretty genius. Now I can finally get rid of that box thats been in my pantry.

I have been watching him for years. He makes you feel like a genius...by showing you hat the simple stuff you love is serious food. And he never wastes a scrap.

I have made this leek soup dozens of times with many variations and it is so easy and so delicious every time. Oh, and that stuffed pork fillet... 60% of the time, it works every time. ;)

I could watch Jacques Pepin read the Phonebook while making a Peanut Butter and Jelly sandwich. What a great chef, teacher author and and artist. Despite his accomplishments, he remains humble. Love his stories growing up in Lyon cooking with his mother.
Oh I wish I had a good recipe for Salmon Mousse. It looked so good.

All the episodes of “Fast Food My Way” are great but this one is something special. This was like the pinnacle of elegance meets fast food. A perfect menu across the board and one I make a lot. The soup in particular is amazing.
Magnificent! Thanks for posting! The leek soup is quick, nourishing, and warms the heart as well as the body, as does everything Pepin makes, for that is his purpose-based technique. Food nourishes the body as well as the soul. He never forgets this.

I came home from work too tired to cook.,.years ago. Flipped on the tv,.,and found Chef Jacques whipping up some dish so simple that I could not believe that could be called cooking. Mashed potato flakes to thicken the soup…he never disappoints.,.

OMG! I want to make it all! I would be Ms. Pacman! LOL!!!
In todays reality chef shows and tv programs etc there are alot of great chefs.......but...Bobby Flay, Gordon Ramsey, Robert Irving or Anna Olson etc, cannot hold a candle to Mr.Pepin......He is truly in a league by himself....all the rest are just cooks but Jaques is a true Chef Master of his trade!
I just ate, but now I'm hungry again.

Made the pork last night. Was so delicious that I don't even have leftovers bc my guests took them home! However, 10 min at 350 was not enough time in my oven. I turned up the heat and left it in longer. Was still a touch pink which was perfect. You may need to try higher heat or longer time or both.

@inmens Instant potatoes are very useful, and I honestly think this is a great way to save time on vichyssoise. If you blend up the soup like most recipes I've seen, then going through the trouble of peeling and cutting potatoes isn't necessary. If you have the time, you can dehydrate potatoes yourself, but if you read the ingredients list of the instant potato you're buying, you can find ones that only have only have potatoes and salt.
Would you believe i've never seen the "double butterfly" before? Is that weird?

You are right, but I guess it was mostly hot. He has a good gas range which will heat the pan pretty quickly. Basically the worry with "boiling" it is if the food releases water faster than the pan can evaporate it. So, if the temp of the pan comes up before water starts to come from the meat then it will still be ok.

Not really. Outside of France people think it is the case but it is very very rare for a French man or woman to prepare onion soup. Leek and potato is the one that is the most frequent. By far.
