INGREDIENTS:
1/2 pack dry italian spaghetti
1/4 cup olive oil
3/4 lb Morel Mushrooms
4 Garlic clove
1 3/4 cup chicken stock
1/2 cup heavy cream
salt and pepper to taste
salty boiling pasta water

    If you use a mesh or netted bag to hold them the shrooms will drop their spores as you forage so it helps spread them around. Make sure you save some for the Squatches! I love foraging! Especially shrooms, greens like nettles and fiddleheads and I've even foraged my own 🐌

    Don’t think the mesh bag really matters here. These only grow like a year maybe 2 max after a fire.

    It doesn't matter, they throw around 400,000 spores when they emerge. And they grow differently in different regions. I live in northern Michigan and they grow for many years in the same place. Our season is usually mid April till end of May and they're done here.

    2 years ago in Kansas we had a bumper crop of Morels. My buddy and i found 60lbs in 4 hours and the next day found 40 more pounds in 4 hours. We had them all sold for $30 a pound in about 3 hours. Over the next several days we found about 50 more pounds until the big rains came and flooded them out.

    10 years ago i lived in Oklahoma and found over 100lbs in few hours. Side creek that ran into the Canadian river.... 2 weeks later found 40+lbs at a golf course. ✌

    Great video. Love (not sarcastic at all) that you indirectly showed and stated (may not have realized it) numerous morel foraging secrets that nearly all mushroom foragers I've met would rather loose an appendage than reveal. I Like this guy. He just wants to teach people. Thanks!

    i am lucky enough to be in an area they are picked so getting them fresh every late spring is an anual treat. they coincide with spot prawn season another delicacy.

    Also a new viewer seeing an older video for the first time, but I have to tell you I loved the section on gathering morels up in the mountains and all the nature shots. I'd love to see an episode almost like primitive technology but for cooking, gathering (some) ingredients in the wild and cooking a meal there, appreciating the atmosphere (hopefully not starting any wildfires). It definitely shines through in this video how much you appreciated the experience, makes me want to go out and do some mushroom hunting!

    I made this for my family tonight with some homemade bread. It was delicious, thank you! I grew up hunting dry land fish. This was the first time I didn't fry them up with some corn meal. The flavor permeated the pasta and my family loved it!

    I just discovered this channel recently like spring of ‘22 and am now working my way back from the fridge abuse era watching these older vids… so cool to see that dog as a puppy lol. Had to comment just because of that. What a little fluffball dude… also it’s morel season where I live now, so this is awesome. I’ve read so many different approaches to cleaning and cooking them, pretty much just gonna take Sonny’s method as gospel at this point so I don’t have to look it up again every year. 🤘🏼🤘🏼

    You can also make sure your mushrooms are cleaner when they go into your choice of picking container, ie. if you were selling them, buyers don't buy them if they have stems/stipes on them. I would never sell my mushrooms and love having them around all year (two years ago I picked 62 pounds!). A lot of people received Morels gifts. I don't use a knife anymore when picking. I "pluck" them with my hand and the head comes off clean. What stipes I get I have with scrambled eggs and toast (yum!). A spring meal: Steamed nettles, Morels, spring potatoes and Halibut! Awesome video.

    Thanks Keith, yeah this will be great with any mushroom, Just make sure you get them nice and brown with some oil before adding stock! I know I know it’s not fair with my arm!! 👍

    I used to fight wild fires for the forest service and rappelled out of Idaho everyone would pick morels every time we find them and we saved them to add to our camp fire meals we Cooke on the fire line. I also had surgery on my wrist like that. I’m curious if they numbed you up before they pulled the pins out. They didn’t numb me up and after 4 pins pulled out with pliers it was the second most painful thing I’ve experienced. Lol good times.

    If you're skipping the parsley since you want to taste the morels, then I don't get the truffle oil, it's so similar and it will conflict your model flavours. Fantastic recipe and video rho

    You are doing it the right way Dude. Molto bravo , hai fatto bene. However, I would not suggest Parmiggiano for that delicate and (expensive) mushroom. Try use Pecorino or Sheep Manchego . You may like it better.

    For morel lovers try to develop a taste for other mushrooms instead of morels. Because of the heavy metals it collects its best to leave them alone. Native people did not eat these mushrooms.

    Lost me at truffle oil. Overpowers the morels, but to each their own. Truffle oil isn’t necessary at all. Everything else sounded delicious.
