Funny thing, that. Everything in the foodservice industry (with the exception of hospitals) needs to be seasoned or dressed. A cardinal sin is under-seasoning food, so be generous with the salt. Pepper is optional because it can burn, but salt is mandatory.

@@levimatulis6955 They used to be cheap, but I think the market has reacted to the sentiments of what people want to make. I'll tell you what is still cheap, though: _Liver._ Some friends of mine were sadly tortured with liver as they were kids, so they can't eat it anymore without convulsing. But my mother taught me how to make the most of it. The key is to not over-cook it, but instead fry it really fast in lots of butter. And then use onions and cream to make a delicious, delicious stew with it. But what really does it is adding the magic ingredient: Small dices of fry-crusted bacon. You can do just about same process with whale meat, though it's probably not legal in Britain. I think seal meat is still legal tho (harbor seal is best, also because there's an over-population of it), which does about the same trick. But getting a good cut is difficult, and you're prone to getting stuff that smells of cod liver oil, so just be mindful of that. Well, this got exotic sooner than expected! So I'll head back out to the Barents Sea now. Bye!

I forage wild mushrooms in the forest. Such a rewarding hobby! So many mushrooms, so many textures and flavors. Morel season is traveling north currently. Check in your area. Am finding Chicken of the Woods right now but chanterelles will be fruiting in a month or so. Go get you some mushrooms and experiment with some dishes. Instead of generic "cream of mushroom" soup; try "cream of chanterelle" soup.

Go to the asian food section, look for the red chile paste bottle with a white rooster on it (There's two, Sriracha and Sambal. Sriracha is a touch sweeter, sambal no sugar). Go to the produce section, a small knob of ginger - peel the whole thing (spoon works best), chop it up super fine or grate it (throw away threads but save as much juice as you can), place in ziplock sandwich baggie in a thin layer and freeze flat (this way you can just break off little pieces as you need them). 1/4th teaspoon sambal or sriracha, small chunk of frozen minced ginger to taste, a squirt or two of lemon juice (ReaLemon is best or the little yellow lemon shaped bottles), you're set c: You can also boil an egg, cook a frozen chicken thigh (thaw, cut into small strips, oil, salt, pepper, pinch of sugar, garlic powder, cook until the pieces are lightly browned/caramelized. Let cool, throw ontop)

Love mushrooms, although people don't fry them long enough, they end up boiling them in there own water instead of cooking on high heat an evaporating water. One of my faves is mushrooms with white wine, worcestershire, cream and stilton on toasted ciabbatta or replace the wine with masala and replace cheese with wholegrain mustard

If you mushroom lovers want to cook the best mushroom, start them in a cold pan with a small amount of water. Cook at medium heat until the water from the mushrooms and all other water is cooked off. Now, add the the olive oil and butter and if you want, any other seasonings. Cook until brown. Try it. Best mushrooms ever.
