What you’ll need
SPICED COOKIES
320g icing sugar
3 tsp ground cinnamon
335g plain flour
½ tsp ground ginger
½ tsp allspice
¼ tsp ground cloves
¼ tsp ground nutmeg
¼ tsp bicarbonate of soda
120g unsalted butter, softened
175g light brown sugar
115g golden syrup
1 large egg
1 tsp vanilla extract
AMARETTI
3 cups (280g) almond flour or very finely ground almonds, sifted
1 ½ cup (280g) granulated sugar
pinch salt
3 large egg whites (about 60 grams)
1tsp teaspoon almond extract
2 tbsp amaretto liquor or 2tsp almond extract
icing sugar, and caster as needed
BISCOTTI PISTACCHIO AND CRANBERRIES
2 cups (300g) plain flour, sifted
1 1 /2 tsp baking powder, sifted
3/4 cup (165g) caster sugar
3 eggs, lightly beaten
2 tsp vanilla extract
1 tbsp finely grated orange rind
1 cup (130g) sweetened dried cranberries
1 cup (140g) shelled unsalted pistachios
