Love this recipe few ingredients lots of flavour. I remember my grandmother making me this spaghetti dish. Stanley tucci was right to highlight this dish as it is not only simple but delicious. Try making the zucchini the day before and use them next day. Provo;one Ducale is the cheese to use in this recipe but if you can find it use my mix below.
What you'll Need
3-4 Green Zucchini
1 Cup olive oil for Frying (reserve for sauce)
400g Spaghetti #150
2 tbsp of reserved olive oil
1/2 cup mixture of grated 70% pecorino Romano 30% parmiggiano
1-2 tbsp butter
handful of fresh basil
Salt & pepper to taste
Eat well Live Well
