Spaghetti carbonara recipe - original and approved by Romans! Before we start, the number one rule is simple -REAL SPAGHETTI CARBONARA RECIPE IS MADE WITH EGGS, NOT CREAM!
Combine fresh eggs, with crispy guanciale, salty pecorino cheese and pepper to create the perfect, classic Roman pasta dish, Carbonara. In this video recipe, I tested out my traditional version with some locals from Rome and they loved it! Make this classic the right way and I promise, your tastebuds will thank you.

HOW TO MAKE SPAGHETTI CARBONARA
INGREDIENTS:
5L Water
Pinch rock salt
300g/10 oz Spaghetti (or Spaghettoni/Rigatoni/Paccheri)
150g/5.3 oz Guanciale
200g (2 cups) Pecorino cheese
4 eggs
Pepper
UTENSILS:
Large pot for cooking pasta
Chopping Board
Knife
Large fry pan
Mixing bowl
Fork
Ladle
Long set of tongs
METHOD:
1. Spaghetti carbonara takes just a short time to make so first up, boil the water to cook your pasta in a large pot.
2. Cook the pasta according to the packet instructions when it comes to time, making sure the pasta is al dente.
3. Cut the skin off the guanciale (making sure to leave the peppery/seasoned crust), then slice it into thin strips.
4. Put the large fry pan on the stove at a low to medium heat. For the spaghetti carbonara recipe to be just right, add the guanciale into the pan, let it cook very slowly and it will create its own delicious oil.
5. Let the guanciale simmer and crisp up very gently.
6. Get your mixing bowl and add 4 eggs, then whisk them really well.
7. Next, add the pecorino cheese to make this spaghetti carbonara recipe, and lots of pepper before mixing it together really well. This will create a scrumptious cream for you to add to your pasta.
8. Once the pasta has boiled to your preferred taste, using a set of tongs, take out the pasta from the boiling water and add it straight to the pan, making sure small drops of the water mix into the pan too.
9. Turn off the cook top, so the pasta and guanciale stop cooking.
10. Next, using the ladle, get a full scoop of pasta water out of the pot and add it to the egg and cheese cream, then mix through well using a fork.
VINCENZO’S PLATE TIP: The pasta water is the KEY to making the Spaghetti Carbonara recipe PERFECTLY! Don’t miss this step!! It will help to combine all the ingredients well and they will stick to the pasta better.
11. Now, turn the cook top back on a low heat, add some pasta water to the pan, and now, pour the cream over the top, then mix it through using your tongs - be gentle, but fast! Let it cook through but don’t let the eggs scramble or you will end up with a frittata!
12. Keep mixing the cream through until it just starts to thicken, stir is through and then serve.

    When I've had carbonara in restaurants I'm sure it has always had garlic in it. Its pretty good like that, but I assume it is not authentic. You didn't use garlic, so I'll follow your recipe to see the difference. Thanks very much and subscribed.

    @@vincenzosplate I think you are holding a piece of pancetta and not guanciale. Guanciale has a very specific meat striation, not found anywhere else on the pig. I could be wrong but it looks very much like a piece of pancetta because of the multiple meat layers but specifically because of the flatness of the skin, not found on the pig's cheek.

    ​@@prospus468 I agree but problem is that it's not so common like for the italian food to see things like "american restaurant" or "real american food" everywhere, with some american surname in the name of the place, like they are making real american food. For the italian food is more common in the world, I traveled too and the situation for italian restaurants was like this. I perfectly know my hamburger is not like the real american one but I won't spread in the word my version without saying it's my version or restaurants here don't say this is the american hamburger. In general what I find funny is that sometimes if an italian say this is not how you make an italian dish, everyone get upset. If a japanese say this is not how you make sushi, everyone is like "ohhh * ___ * interesting!!" Be honest, you would have said the same thing if this was about a japanese dish and the comment was written by an american from a japanese family?

    I wanted to cook Spaghetti Carbonara since I tried it for the first time, but I was always afraid of adding eggs. This video makes it so easy to do so I gave it a shot.     @@Thekiko2501 both are wonderful, but in different circumstances... pecorino is more salty. In certain dishes, Italians will use both to mellow out the dish... and they're usually right!

    @@vincenzosplate i have a question abouth a recipe of my own invention. Its a spagettini with kerry bechamel and portobello mushrooms with sage oregano and thyme and bimmi. Almost like a Ragu Verde, instead of bianchi or rosso. And ofcourse topt with Pecorino. What do you think?

    Io la faccio in un altra maniera e purtroppo un goccio di panna(al posto dell acqua della pasta) ,i clienti miei qui la vogliono cosi ,sai come' posto che vai usanze che trovi !     JB P Did you make it exactly as stated? If you did maybe you over salted the water for the pasta… Or perhaps the pecorino is too strong for you… Use less.

    @@BP-or2iu The guanciale is salty and the pecorino too, when you add salt to your pasta water, do it sparingly. That's the mistake I made initially anyway :D Edit: I see Patti beat me to it, enjoy ;)

    Patti Kehoe It was the pecorino. It should be halved. I didn’t really salt the water specifically because of the salt in everything else. Also, I drained much of the pancetta grease... I eat very salty food but this was too much. Made it again with much less pecorino and it came out much better.

    I think high quality pasta, eggs, guanciale/pancetta and cheese matter a lot to the end result. Also let it thicken quite a bit. If it seems much too liquidy after adding the pasta water to the eggs and adding the pasta water to the pasta, just keep it on low heat and it will thicken over time.

    MiNi Weeddeerz infact at the end was all wrong! We don’t do it like that in Italy! That was so wrong the entire water it do not go to add with the egg’s cream!!! U must switch off before u put only the egg’s cream!!

    i have just used this recipe and technique today. probably the best food i have ever eaten. ive copied your bolognese recipes before and wow they are just amazing. it may just be my family, but i was brought up believing bolognese was tomato, beef, onions, mushroom, and any herb you have in the jars in the cup boards. the authentic bolognese is just out of this world. so fresh, delicate, rich, and complex. ive tried some of your pizza recipes but i need to buy a pizza oven... I've also started copying your recipes / techniques to make pasta and my 3 year old loves to help make it. today she was in charge of mixing the pecorino and egg. she helps to make dough etc. so thank you so much for all your content. it means myself and my family get to eat some amazing food. It's also a chance for me to bond with my family, by making pasta / pizza with my daughter. or by my wife knowing how much love goes into making these amazing dishes. Thank you again Dean

    Actually pizza stone can work well I normal oven. It's cheaper alternative. It's not same good as pizza oven but close

    I love and miss Italy! I was fortunate enough to go there when I was in the Military.. The people, the food, the country are all FANTASTIC!! The best country in all of Europe!!!! Nothing but good memories and fun times. One day my wife and I will go back to visit but as civilians to tour the beautiful countryside.     Just did this recipe and omg. It's a must try, really easy, really tasty and just perfect! And the eggs didn't cook at all so adding pasta water to the egg/peccorino sauce is nice tip. Thanks Vicenzo for this, i will be eating Carbonara at least once per week!

    I just made this for the family tonight! It was delicious! The only thing I had trouble finding was the pork. I was stuck using pork jowl. And it was smoked. It still turned out delicious.     Well here I am, 9 o'clock in the morning and cooking Carbonara after watching your video. Could not make it absolutely traditional as you did (had no Guanciale) but used the Panchetta I always keep some of in the freezer and only had Parmesan Cheese.. but man, that was a breakfast!!     Delicious! I remember being freaked out the first time I made and/or tried this dish, because an egg + cheese sauce sounded so strange. Now it's one of my favorite things to eat (along with cacio e pepe, and alla gricia)!

    This is such a beautiful meal! So simple, yet elegant. True comfort food at it's finest. Thank you for sharing with us.     This is exactly how I make it but one added thing I do is remove the guanciale from the pan and leave the remaining fat and add it halfway through mixing with the egg and cheese mixture it as I find the pasta water can make the guanciale soggy and loses its crispness when added.     Exactly you must remove it!!! And dont add the water in the cream eggs, totally wrong!
