    The beauty of this video is in the relaxed, encouraging way you share the potential of the oven beyond pizza (and round pizza at that!).     This has really opened my eyes to the flexibility of a brick oven. I can wait to try the steak. I have been a sear/indirect/sear and baste person for years since having a Weber, but the flavour of the wood has me champing at the bit to get this over/outdoor area started and completed. I have enjoyed all your videos so far. Great production and instruction. Cheers fellas.

    Well done you two. Beautiful steak and this is probably a little late but to leave the steak until room temperature is: 1 - So the meat can spring back from the cold. Putting in the fridge/freeze will contract everything and make everything tight, so cooking at room temp allows the meat to come back to full body and get that juicy tender texture back. 2 - Imagine how much water has gathered and compacted on and in the steak while frozen, you don't want that so allowing time will help evaporate some of the frozen water, then at room temp you can dry off or blotting the steak before cooking. No2 is the more important one of the two. Again, great video.

    Fantastic guys, I bought my oven a couple of years ago and absolutely love it. There is very little decent cooking content out there, this is definitely a good move! I can also highly recommend a chanel called the wood fired chef, another wood fired enthusiast.

    That was a great video. I have been using the full range of heat from my oven even down to about 130f to dry peppers. My door is about 3" thick fully insulated so my oven stays hot for days.

    If I may make a suggestion,I put my chicken breast side down for the first 20 minutes and then turn. It usually comes out really moist and doesn’t dry out. Please bear in mind I’m Michelin chef. This was the way my mum used to do it. You are both very inspiring people and you impart your knowledge in a casual but effective way. Thanks Chris.

    When doing a bulk pizza night i have found that putting each pizza on baking paper works better than using semolina. That allows you to prepare all of the pizza's in advance each on a sheet of baking paper. When cooking just slide the baking paper on to the paddle and it slides off easy into the oven. After 20 seconds cooking the pizza base has firmed enough where it separates easy from the baking paper. Simply take the pizza off the baking paper and then put the baking paper in the fire.

    Great tip! I've seen that done before and it works well - the paper burns around the pizza but not under it. We will be doing a video soon on various ideas to make life easier when you're having a big pizza party, thanks for the input!

    Great fun watching you two cooking, the only thing I would say is not to wash your chicken, it's not necessary and actually it increases the risk of cross contamination by splashing other surfaces with contaminated water so you would need to make sure you wash everything down afterwards, also remember that almost all poultry will be contaminated with campylobacter and or salmonella so please make sure you wash your hands thoroughly after prepping your chicken. The reason chefs take their meat out of the refrigerator before cooking is so that its not really cold when you start the cooking process otherwise the outside will cook and the inner core will still be raw which will result in a dry piece of meat and the risk of harmful bacteria may still be present and viable. I was actually considering buying and shipping one of your ovens over to Kalkan in Turkey but unfortunately the shipping costs make it too expensive for me. I have worked as z chef for the last forty odd years and now I'm looking forward to retirement in Turkey with my wife but I plan to have my own wood fired oven and learn a new method of cooking so please keep the videos coming.

It would be great to be able to get you an oven, we have a distributor in the UK but even then the shipping would still be pretty expensive.

    I think he meant infused. Impregnate is what I did to my wife and now she is a headache. 😆 Great video guys. I love the design of the ovens! I've had to settle for a Matador oven for cost reasons but it doesn't offer retained heat as these ones would and so I miss out on some of the other dishes that are possible. As for steaks or meat being brought to room temperature, this is really just for a more even cook. With a hot grill, the outer will obviously cook quicker and possibly burn the meat without the internal part coming up to desired temp.

    I enjoyed your video. Another bread to try is pita works great in the oven. Typically, I make enough for 10 breads and the same is true with pizza. I do have a question, our kitchen scale is at end of life. I the one complaint that I had with ours was reading the display. Yours is more offset and is easy to read. What brand is it .     We used the P85 for the cooking on the way up, and the D105 for the roasting at the end.

    Most of the cooking is done in the P85, the chicken was roasted in the D105

    Thank you Ben! If you built our P85 PreCast Oven on a suitable steel frame, you can definitely take it with you. They're quite heavy but if you go with one of our steel frames (or have something similar fabricated) then it can be moved around with a pallet jack quite easily.

    @@TheFireBrickCo your ovens do look amazing! I can say too bad you dont sell in the EU but probably these will be above my budget anyway! Currently I have a Clementi oven which is not bad at all but I do notice the floor temp going down much faster than the conventional pizza oven my friend has. Which can be annoying....

    I’m no chef but you allow your steak to reach room temp before cooking because otherwise you risk having to overcook the outside before you can get the core temp up

    Good feedback Kyle! This was our first one so we were just feeling our way through it. Next one - well the next one will be more of a teaching video on how to use your oven as a smoker... Pretty sure it will be about 20 minutes of teaching before I even start prepping the meat (again!) but there's a lot I want to communicate in that video. Gees I do talk a lot.
