Ep 20: Chicken Dijon from the Wood Fired Oven

Chicken Dijon, or Chicken in a creamy mustard sauce, is one of my favorite recipes to make in the Wood Oven.

Enough skin on chicken thighs to fit into your pan
Salt and Pepper
Olive oil
2 slices of diced bacon
One sliced onion
1 cup of white wine
128 grams, or 1/2 cup, of crème fraîche
64 grams, or 4 tablespoons, of Dijon mustard
16 grams, or 1 tablespoon, whole mustard seeds or a grainy mustard
1 tablespoon fresh thyme leaves
2 cloves of sliced garlic
Salt and pepper

This will be a perfect dish for my home made wood fired oven. You inspired me so much with your wonderful dishes, which made me realize that I wanted to make more things than just pizza. So I added another layer of insolation, and now I can make things like these, and other things that require a slower cook and not as intense heat. Thanks again for keeping this channel great!

I’m known now as “the guy who knows how to use the wood oven”. I’ll cook this dish here and see how many people come past and ask for a serve!

So glad you are back. I made pizzas a couple of weeks ago using your exact receipt for the dough. It was fantastic. Everyone loved the fennel sausage pizza as they had never had it before. Finally, the master is back! This looks really good. I only have a small pizza oven (not suited for this, gets cold fast and don't have much room for wood), so I will try this one on my stove.

Thank you for sharing I’m going to try this recipe. Reminds me of recipe I used to make where you would put Dijon into an Alfredo sauce over your pasta. It was surprisingly really really good.

Of all internet mysteries, few compare to the mind boggling small number of 54 thousand subscribers to this fantastic channel. I thought it was only a matter of time for a major tipping point of sorts, when people would realize this is, arguably, the most sophisticated KZread production of all time, and flock to it like mad. But the world is a trashy place where cute children have 160 million + followers on Tictoc for doing cutesy dances. In any case, I have done my part divulging it maniacly, and still have faith some day this channel will be discovered, and have the huge number of subscribers it most definitely deserves

It's a great way to cook chicken
I tired cooking this last night, the sauce was amazing. Once my husband finished the chicken he went up for seconds with the sauce and bread I made. It took me back to first night in holland, we found a restaurant that made beautiful mustard soup.

Disregard my comment from yesterday. Figured out the oven temperature and made this incredible dish tonight, along with French beans and your garlic bread. The chicken was stunning, and the bread may have been the best garlic bread we’ve had. Thank you for the amazing recipes and videos Clive.

Clive, great recipe and preparation. Suggestion: Have you tried dry brining the chicken? Season the thighs with salt, both sides. Place on a rack, in a baking pan to fit the rack, and leave overnight in the refrigerator (24 hrs is best). The skin will dry out much more than patting dry. When ready to cook, do not reaseason with salt, just add the pepper. The skin will turn out very crispy.

Thank you, Clive. All that is missing for me to replicate your scrumptious dish is knowing the approximate oven temperature. Im guessing around 250 260°c at the hottest area and maybe about 180 near the oven entrance. Then, i could be completely wrong.

I always fire my oven up to the same temperature, which is around 650-700F/340-370C in the center of the oven floor. Then take advantage of the variable temperature between the fire and the oven opening.

I don’t have a wood fired oven, so I set the fan oven at 200°c, and fair play, this was bloody fantastic, intense and rich, served it with purple sprouting broccoli and Jersey Royals, I’ll be doing that again.
