Cookie Dough Energy Balls 🍪 EASY VEGAN SNACK RECIPE

*Recipe down below. WOW, these are way too good! I'm excited to share with you my cookie dough energy balls. These make a great snack and will last a while in the fridge... if you don't eat them all first.

Cookie Dough Energy Balls
Ingredients:
1 cup rolled (or quick) oats
4 large medjool dates (or just under 1/2 cup of dates)
3/4 cup non-dairy milk
1/2 cup peanut butter
1/3 cup protein powder (VivoLife Salted Maca Caramel is ideal)
1/4 cup ground flax
1/4 cup chocolate chips
1 tsp cinnamon
Pinch of salt
*Flaked coconut to roll them in
Method:
Blend oats in a blender or food processor to make oat flour.
Chop dates
In a large mixing bowl add all the ingredients and mix with hands until uniform consistency
Roll into balls
Roll in flaked coconut (optional)
Place in fridge for 20-30 minutes then enjoy!
*Can be made in a food processor or high powered blender

No I do care!! Hahah, I cut it out but I kept saying just about every ingredient was optional. The flax, the chocolate chips, the salt, lol. What the heck are we left with?!?!

omg just made these and they're delicious! thank you :) btw if anyone's wondering, I omitted the protein powder and just did 1/2 C of oat milk instead and it worked perfectly :)

And it grinds whole flax seed so well too. Love the smell of ground fresh flax seed.

@James Parker Seems extremely dangerous for a dog to stick their head in and lick a blender left on the floor. I'm hoping you have some blender without an exposed blade. Highly recommend people with animals don't leave blenders on the floor.
You can soak the dates in warmed nondairy milk if you need to. That way you're not adding any more liquid to the recipe!
These are going on my post-apocalypse to do list. I'm making these as soon as I'm allowed out to buy chocolate chips :) Thanks Derek!

DAMN! That would have been a GREAT idea. I thought about putting hemp in them, but not sure why I didn't think about rolling them in hemp seeds. It could have been Cookie Dough balls 3 ways!!!!

Hey Derrick. I’m a big fan. Wanted to tell you I never ate a date in my 70 years. After watching you, I tried them and now I eat them everyday, in cereal, oatmeal, smoothies etc. Btw, it’s best to use Ceylon cinnamon as the standard has too much coumarin, can be toxic to your liver.

It's probably fine to use the standard cinnamon in occasional recipes like this one. I usually do because I think it tastes way better than Ceylon cinnamon. If you use it it every day on the other hand, like in oatmeal, then better to use ceylon.

Ohhh, yesss. I’ve become the Medjool Date fairy lately! My grandma mentioned snacking on gumdrops & I gave her a date-she now wants those. Will surprise her with these cookies sometime.

Thanks Derek, watched the video and made the entire recipe in a total of about 20 minutes. Dayum! Also appreciate any more apocalypse recipes - especially those that use minimal ingredients (ie to stretch out our quarantine supply)

What a great recipe. We made it original the first time. We did make some tweaks 2and time around. We added the cocunut to the blender and mixed with the oats and flax seed. We added chopped walnuts and mashed in a banana when mixing dough. AMAZING! Keep up the great work and iseas

I like making energy balls with just dates and crushes peanuts. I use a food processor and blend the dates until they form a ball on thier own. Then just roll them in peanuts.

Can't wait to try these! Also really helpful that you don't add your dates into a blender. I've used so many recipes in the past that say to do this and it just makes a big sticky mess in my blender instead! It seems obvious now to just chop them up instead but I think I needed you to do it first to make me realise it was an option!! Will do this in future, thanks!

Guys, if you don't have medjool dates just blend the dates you have together with the plant milk whatever it may be and put that in the flour together with the peanut butter. I've tried it and it works well, no problems.
