I'd love to see your BBQ spice cabinet. Gotta be 150 different rubs/spices/hot sauces/glazes/BBQ sauces in there...lol. Heck I don't even compete and I've got a good 50-60 different items. Thx for sharing brother. What is your comp schedule? Would love to come say hi if you're ever in my area.

I've got quite a few shakers. I've been blessed to have some great friends in the bbq world so I'm always trying their products. Honestly, I really don't do many comps anymore. I enjoy youtube more. I'll do Memphis in May, Praise the Lard in Murphysboro , and maybe a random one sometimes. This wing recipe is a test cook for MIM. Trying to decide if I want bite through skin of crispy skin.

I had fun eating these babies. Now to make the judges have fun when they eat them.
I made this marinade last night and it smells amazing!! Might be a little heavy on the hot sauce because it smells HOT. Going to make these in a contest this weekend! Wish me luck!

Only thing different was I used some Meat Whiskey Sauce and peach ghost pepper hot sauce. Best wings I've ever made. Appreciate you Matt.
I’ll say this. As someone who’s done competitions I always appreciate your attention to detail. I know you’re a modest guy but damn you can cook lol. Great video brother.

These were a hit. I would have ate all of them, but I had to share a couple just to flex a little.
Damn it man...nice!!!!! I like the thought of bite through wings just as you would do chicken thighs or legs in comps..damn gotta give it to ya..i wish i would've thought of that first..now its on..gotta try brother!!

I was practicing these for the wing ancillary at mim. Once finished I see where they could win a kcbs. Even with the hot sauce.

They are fiskars. I think I got them in the craft department at the walmarts. I'm all about using non food items in cooking.

Thank you Jay. I hope they win. These may be my MIM wing entry. I rubbed the drummies down with Garlic Jalapeno and MOJO. No marinade or butter bath. Just let them ride until they hit 200°. They were snacks for the family.
