INGREDIENTS:
1 cup coconut flour - make sure to spoon the flour into your measuring cup - do NOT dip the measuring cup into the flour. It will be compressed, and the dough too dry
2 tablespoons cornstarch or tapioca starch or arrowroot powder
½ cup granulated sugar or sugar-free substitute amzn.to/3v0iuFs
1/2 cup melted butter (or dairy free alternative)
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract, optional
½ teaspoon baking powder
1/8 teaspoon sea salt

I've done that successfully in other coconut flour cookie recipes, but never tried in this one. I am not sure if flax egg will still make a rollable dough
Hello! i have cooked this twice, but i havent gotten the same texture that shows in the video :( the first time i didnt extend the dough neither let it chill in the freezer, i just made shapes like chewy cookies, and got this in the oven, but at 10 minutes or more i felt this wasn't cooked, so i let them 30 or 40 minutes till i saw they were cooked, but obviously they finished hard like rocks! the second time i follow the receipe word by word, but at the end of 10 minutes in the oven at 350º F i saw them sotf and wet so i let them 2 minutes more and then i took out of the oven and let them cool , then i checked them again and they were still soft. do you know what happened? they still are delicious :D but not crunchie like i expected

Hi Lupita, sorry about the issues you are having. Sounds like the first time was a bust. I think in the second attempt you could have just let them in the oven a couple more minutes to get them to your desired crunchiness. I have to say though, the cookies are crispy with a nice snap when you break them in half or bite in. But the center middle still has a bit of softer chewiness. I think that is just the nature of coconut flour baking.
When I use coconut flour, the dough just crumbles especially when try to flatten it,even rolling in balls it feels it wants to separate. ☹️ Any tips, want a more shortbread biscuit?

It sounds like the dough is too dry. Try using less coconut flour next time. Of adding a little liquid to bring it back together, like more melted butter/oil, water, etc.

I don't have an eggless version of this recipe, but here is another coconut flour cookie that can be made with flax egg substitute instead kzread.info/dash/bejne/dId10NB-c8q5qto.html
