Today I'm going to show you how to make dark chocolate bark.
This almond chocolate bark is a great snack for any time of the day.
It's an easy way to add more nutrition and double the quantity for less money.

It's super crunchy and delicious!
You can keep it in the fridge for months!

DARK CHOCOLATE BARK RECIPE
Ingredients:
7 oz dark chocolate (200g)
1/2 cup almonds (100g)
1/2 cup peanuts, raw (100g)
1 tbsp maple syrup
pinch of salt
NUTRITIONAL INFO (per piece):
107 calories, fat 7.6g, carb 9.2g, protein 3g
Preparation:
For roasted nuts: in a bowl combine almonds, peanuts and maple syrup.
Spread in air-fryer basket, sprinkle with salt and air-fry for 10 minutes at 340F (170C).
Break the chocolate into small pieces and melt in the microwave, stirring every 30 seconds.
Add the roasted nuts and stir until all the nuts are coated.
Spread the mixture on a lined baking tray, top with some extra nuts and put in the freezer for 30 minutes.
Cut into bite sized pieces and store in the fridge or freezer.
Enjoy!

    @@theperfectionist4702 ​ diet is def not better than normal soda. The artificial sweeteners used are pretty bad for you and have some negative effects despite the low calories. Plus the soda still has all the same shitty unhealthy ingredients, just with no sugar. You should really find something else to drink if you’re drinking it everyday. Also, this can’t be compared to chocolate as very dark chocolate is actually pretty good for you

    I once did that with 85% dark chocolate.I roasted some walnuts,almonds and pumpkin seeds.Added a little bit of raw mangrove honey. It tasted really good.

    I add dried fruit to mine, like dried currants, dried cranberries, dried apricot and dried blueberries. I add almonds, pecans, chia seeds, dried coconut flakes, and walnuts. I make this type of chocolate bark with any combination of the above, it just depends what I have on hand at the time. So good! And way healthier and tastier than store bought chocolate. 🍫

    I love this idea to stretch out the quality chocolate and make to your own recipe. I will add to the nuts my toasted pumpkin and sunflower seeds, maybe top with a sprinkle of toasted sesame seeds. Thank you Sasha you are definitely my smart cook.

    Hi Lauren! So true, but what about if you break the whole thing in many small pieces and make the decision to eat only one piece each day? I know, it's totally addicting... but it's pretty large batch with 200g each chocolate and nuts. I appreciate all of your kind words you send over.     I’ve made this before, but used 99% dark chocolate with nuts and naturally dried fruit pieces for sweetness (which it needed. 99% is rough). Good stuff

    My mother made this for Christmas in the 70-ies when I was small. She used hazelnuts and raisins, sometimes a little orange zest too. I love it!

    I found a dark chocolate at wall mart by Lindor and it’s sugar free ! I made this snack and it’s absolutely delicious thanks for sharing it with us! I’m on intermittent fasting to loose weight so I’m doing zero sugar and so I have a hour feeding window and I end it with a piece of this lovely treat 😊

    I took an idea from a woman on Facebook and made healthy fudge with chocolate and peanut butter (50-50). But I used 100% dark chocolate and added honey for sweetness, and then added the peanut butter. Yours seems like another nice idea to try :)

    @@lenoreorrell2450 that's literally it 😆 chocolate and peanut butter (or 100% chocolate, honey and peanut butter). No measurements, just by taste. The chocolate and peanut butter should be roughly 50-50

    Only in moderation though. Both are Nuts and Dark Chocolate are calorie dense and very high in fats, they are only good if you don’t eat too much.

    I started melting different brands of dark chocolate from 60% to 100% cocoa together (I like variety LOL) then adding nuts and making my own bark or put them in those mini muffin cups for nut clusters to give as gifts, but I never thought about roasting the nuts first! Especially in the air fryer! I’ll try that next time! Also, the idea of putting oats and raisins in it sounds good too! 😋 Thanks for sharing!

    This was my first time watching a vid of yours. It seems you're taking a lot of hits on this and I'm not sure why, healthy doesn't equate to low cal. I made this bark within 24 hours using date syrup and it's such a treat if you like dark chocolate. A suggestion regarding nutrition info is to calculate by ounce, not by "piece," which is really not measurable unless they are all cut the same, and then we need to know how many pieces it makes. It would be more accurate using a more measurable unit like ounce or half oz (my batch was about 12 oz). Great recipe, thanks much!

You're right eating healthy is not only about eating less calories, so I always start with good wholesome ingredients and then try to lower the calories, improve the macros, mainly protein content, like I did it with almonds in this recipe.     Hi Sasha - nuts are also delicious if you froth up a couple of egg whites, add some sea salt, cinnamon and sugar to taste, then roast in the oven for about half an hour, turning every 10 minutes. Although they are sugared, they are very tasty and satisfy easily. Or you could add chilli or curry powder instead of the cinnamon/sugar for a savoury fix.

    In Greece we call these βραχάκια meaning little rocks cause we "stack" the nuts in a small pile and that way we make bite size pieces. Those are great for holidays. Your version is a pretty good one as well but has a bit too much chocolate compared to the βραχάκια. Those are more like.... Chocolate covered nuts if you wish

    I do this with sugar - free, stevia-sweetened chocolate.😃 I love the idea of using 2 different nuts and roasting them first, and adding raisins and oats. I am going to do that next time!

    I have often bought dark chocolate and put it in the fridege and mibble pieces at a time. One bar can last me 1 month. Im looking forward to trying this recipe and enjoying that 1 bar for a longer time. Thanks!!

    For optimal result, you have to template the chocolate, that means to heat dark chocolate 45-50ºC cool down to 28-29ºC and then heat it up to 32-33ºC. Easy way to do it is heating 1/3 of your chocolate, then when it is hot you add the solid chocolate, satírico inútil you have all chocolate melting and then heat it up just a litle bit in the microwave. The result it is a glowing bar with a perfect snap. Store this in a cupboard, chocolate gets moisture and odors in the fridge...

    @@cyrilsalibi9288 there really isn't any way to do it without a thermometer. You want a candy thermometer, as typical kitchen thermometers dont display low enough temperatures.

    I reverse the ratio and do not use a thermometer. You can tell if the chocolate is tempered if the bar is shiny and snaps when broken. The added chocolate should be finely chopped so it easily blends into the melted portion.

    Add some of your unmelted chocolate (chop it up into smaller pieces) into your hot melted chocolate. Stir well until the unmelted chocolate melts (do not microwave again because you'll have to repeat this process). This will create a chocolate that does not have to be refrigerated once it has set up solid. It will not melt in your fingers, plus it will be shinier.

    So if I melt chocolate au bain marie, I just add some more chocolate pieces later, when I took the liquid chocolate off the pan? And then I just wait till it slowly melts as well? Thanks!

    @@M_K_M_K_M_K Pretty much yes. I'd remove it from the stove and stir while adding in some unmelted chocolate pieces. Once teh chocolate is becoming less runny, you have to guess when to stop adding in unmelted chocolate in order for the pieces you tossed in to completely melt. Reheating it again means you have to do the process again. I know I tried melting chocolate chips in the microwave, removed them from the microwave and stirred them well (they easily turned into liquid), and I would toss in a handful of solid chocolate chips, stir (doesn't take long before they melt), and toss in a few more (in a lesser quantity than the first time), and stir, stir, stir... the main bowl of chocolate does cool down as you add in the room temp chocolate chips, but the heat of the melted chocolate will melt 1-2 handfuls of unmelted chocolate. I don't know why it works, but it does. At that point you need to add in the ingredients you want to add in to make your candy, whether it be nuts, pretzels, etc...move quickly. Then place it to dry completely on wax paper, and once it has dried it does not melt in your fingers, should be shiny, and can be kept at room temp.

    Can't go wrong with raisins, salt is not really necessary if you salted the nuts before.

    I've been making my own keto vegan chocolate for a long time using cocoa butter and baking cocoa sweetened with sucralose and erythritol and flavored with vanilla. Roasted, chopped hazelnuts go very well with it. I melt it in a small saucepan and pour the melted chocolate over the toasted hazelnuts in silicone moulds. After 15 minutes in the freezer it's ready and we love it. 🙂💕

    Adding nuts gives it way more cals so keep that in mind. When I crave chocolate , I eat chocolate, typically the dark kind which is less sweet but higher in cacao butter. I get it with protein - yogurt- , pure cacao , I had healthy fats (nuts -almonds around 10gr for me) Throw in some fibers for your microbiome too (I add Frozen berries) . I get quickly satisfied & full for longer but without the same amount of calories. Don't be shy , add a drizzle of honey .

    Calling something with this much sugar in it "healthy" is kinda disingenuous. Yes, dark chocolate has some health benefits, but you can get those benefits from other foods without all the sugar. It's okay to just enjoy chocolate every now and then without having to make excuses and try to claim it's "healthy" because it has nuts (roasted in maple syrup, mind you) added to it.
