I substituted the shrimp with scallops and I think I liked it better than the time I used shrimp. Sure is a easy recipe to make after watching Jack. That's why I copy so many of his dishes. Because he makes them so easy but they taste like you spent a big deal making them. That's why this is the best Channel for "what's for dinner" coming up with something fast but tastes fantastic. If you haven't gotten any of Jack's Seasoning please do yourself a favor. It's simple but it goes with everything and it goes a long way.

Wow... I LOVE LOVE Daddy Jack. He is absolutely THE MAN. I can't believe I'm going to disagree with his amazing taste and pallet but that dark roux comment... I make gumbo all of the time. And the base... The cornerstone of the rich, wonderful flavor of a good gumbo is oil and flour cooked almost black. Dark chocolate brown. Daddy Jack is the best cook on KZread, hands down. I can't believe I am disagreeing with him!!!!! I feel like now maybe I don't like a dark roux so much now!!??? I wish I could make my gumbo for you Jack. I'd love to get your totally honest assessment.
