Yall can call him a legend and I know he’s dead but are you surprised? The man cooked everything at 1000 degrees and with WAY too much salt and fat. This is as traditional as a fucking shart. No thanks. His meals look like shit and his cross contamination probably would have killed him if his fat didn’t. Green onion in everything. It’s honestly probably best he has passed on. Actually, in this case I believe he calls it gravy, correctly, because it was made using a roux, versus the classic method, the latter version he calls "Sunday gravy". For that one you can join the debate, and I think I know which side you're on. 😏 The only problem with his videos is he doesn't get very specific with ingredients, and not at all with quantities, so ya have to wing it.
