Chorizo, egg, refried beans, hash browns and cheese is the perfect breakfast burrito. With habanero sauce of course. Your family will thank you.
I love that with your chorizo, you can actually tell if it's cooked. The store bought stuff in the chub pretty much looks the same before and after. Bisquits and chorizo gravy garnished with cotija, fried jalapeno coins, cilantro and splashed with your favorite hot sauce, anyone?
I really appreciate the variety in your content. I will always watch a brisket video but you've actually inspired my wife and I to make our own bread, hot dog buns, and burger buns. We bought a better grinder and started making our own ground beef, pork, etc. It has been a very fulfilling experience. I didn't think I'd enjoy it as much as smoking meat but they go hand in hand now.

I ordered 2 of the chorizo mix just waiting for them arrive it is a long way from Texas to Alaska. I'm going to go with all beef it goes really great in spaghetti sauce gives in a nice little kick.
Back in the early 90s I had the pleasure (or displeasure) of seeing how authentic chorizo was made. There is a reason there are so many spices and chili powder that go into it - it is traditionally made with all of the spoiled and non sellable meats. Seeing some of the greenest meats go into that sausage still never deterred me from eating it. But it was fascinating (and horrifying) at the same time.

If you like to take the no waste approach, take those potato peelings and toss them in some oil, then seasoning salt and air fry them on 350 for 15 min, and you’ve got some homemade style chips on hand 👌🏻
I purchased the chorizo mix but I was going to case it. Would you recommend keeping it as a fresh sausage (with a binder) or it is pretty good cured with pink salt and smoke?

I'll bet that chorizo seasoning would be great on shrimp with a touch of Gochujang added - served over Hatch chili and Tasso cheese grits. To prove that theory I just bought three packs of chorizo seasoning plus a 3 pack of your other rubs. And I love course grind. For most of my ground meat and sausage I use a 6mm plate.

The grease in Mexican chorizo isn't just for the appeal, it was it's actual purpose. With some chorizo you could stretch out eggs, beans, potatoes, etc and flavor a lot of food for a lot of people.
